We usually have leftover rotis and don't know what to do with it. Here is a quick solution!!
Roti poha is a simple recipe which is nutritious and takes no time to prepare.  A quick and healthy breakfast recipe using leftover roti.

Ingredients:
Roti - 4 
Onion (sliced) - 1/2 cup
Carrots (sliced) - 1/2 cup
Capsicum (Sliced) - 1/2 cup
Curry leaves - a few
Salt, Red chilli powder, Turmeric powder - As per taste
Mustard Seeds (Rai) - 1 tsp
Peanuts- 2 tsp
Lemon
Fresh coriander leaves

Method:
1. In a mixer grinder jar, add roti pcs and grind to get a coarse roti mixture.
1. Heat 1-2 tsp refined oil in a non-stick pan. Roast peanuts and remove from pan. Splutter mustard seeds in leftover oil.
2. Saute all vegetables. Add curry leaves and add grind roti mixture along roasted peanuts. Cook on medium flame for 5 min. Sprinkle little water to add to moisture. Cook for another 2-3 min.
3. Once done, add lemon juice and garnish with fresh coriander.
