Oats - 1 cup
Semolina - 1/2 cup
Curd - 1 cup
Salt - As per taste
Eno - a sachet
Mustard seeds - 1/2 tsp
Chopped Curry leaves - a few
Chana dal + Urad Dal - 1 tsp each

1. Heat 1 tbsp mustard oil in a pan. splutter mustard seeds, saute dals till golden brown. Add curry leaves and then stir in semolina till little brown.
2. Add oats in the above mixture and roast all the ingredients for 4-5 min on medium flame.
3. Switch of the flame and cool down the mixture completely.
4. Transfer the mixture in a bowl, add curd along with water and salt to prepare idli batter. The consistency of the batter should have medium consistency neither too thick nor too soft.
5. Add the batter in greased idli moulds and steam the idlis for 5-7 min in steamer.
6. Cool down the idli and serve immeditely with coconut chutney or green chutney.
