Ingredients:
Boiled Macaroni – 2 cups
Salted butter – 1 tbsp
Refined flour – 1 tbsp
Milk – 1 cup
Grated cheese – 1 tbsp
Salt, Black pepper powder – ¼ tsp each
Oregano – 1 tsp
Chopped capsicum – ½ cup (optional)

Method:
1.       In a non- stick pan, melt butter and add refined flour. Cook for 1 min and add milk, stirring continuously to avoid lumps. Add half quantity of grated cheese and make a nice smooth sauce by cooking for few more minutes. Allow the sauce to cool down.
2.       Add salt, black pepper powder, capsicum. Further add boiled macaroni in the prepared cheesy sauce.
3.       Grease muffin mould and add the prepared cheesy macaroni in the moulds. Top it with remaining grated cheese, few bell pepper and oregano.
4.       Air bake macaroni muffins in preheated airfryer at 180 degrees for 5 min.
5.       Once baked, allow the cups to cool down. Tap a bit and macaroni muffins will smoothly come out of the moulds. Serve immediately.

Ingredients:
Dry mango powder/ Amchur powder – 1 cup
Sugar – 1.5 cup
Salt , Red chilly powder (coloured as well as chilly one)  - 1 tsp
Rock salt – 1 tsp
Black cardamom seeds – 1 tsp
Raisins - a few (optional)

Method:
1.       Mix amchur powder and water in the ratio of 1:6. Cook the puree for 15-20 min till it thickens. Keep on stirring in between.
2.       Add sugar to improve the consistency. Further add salt, rock salt, red chilly powders. Cook further till the consistency gets thick just like any other chutney.
3.       Once ready, few raisins can be added. Cool down the chutney. Once cooled, chutney will get even more thick. Store the chutney in glass container in refrigerator.

Long Aubergine/ Eggplant  - 2 pcs
Rice flour - 2 tbsp
Bread crumbs - 2 tbsp
Milk - 1 cup
Chopped coriander - 1/2 cup
Cheese (quality of your choice) - 1/2 cup grated
Salt, black pepper powder - as per taste
Italian herbs/ Oregano - 1 tsp

Method:
  1. Wash aubergine pcs and cut long slices. Prepare a batter of rice flour and milk. Add salt and black pepper powder along with 1 tsp oil.
  2. In a plate, mix bread crumbs with coriander and oregano.
  3. Dip aubergine slices in bater and then coat with crumbs mixture. Once all slices are coated, top with grated cheese.
  4. Place all aubergine slices in preheated air fryer and bake at 180 degrees for 5 min.
  5. Once baked, serve immediately with grated carrots for garnishing.  




Dry mango chutney is delicious and tangy sauce or chutney which goes perfect with any Indian chaat or savory snacks. It is made using dried mangoes and not amchur powder. Lovely sweet and tangy taste.

Dried Mango slices – 50 gms
Cardamom powder – ½ tsp
Sugar – 1 tsp
Salt, Red chilly powder – ¼ tsp each
Rock salt, Roasted Cumin seeds powder – ¼ tsp

1.       In a pressure cooker, add dried mango pcs and water. Pressure cook it for 5 min. Blend the mixture to make a puree. Sieve the puree.
2.       Again cook the puree for 15 min till it thickens. Add sugar and all other spices and cook for another 5 min.
3.       Chutney is ready to serve with pakoras.

Ingredients
Parle-G Biscuits/ Oreo Bscuits – 1 pack
Milk – 1 cup
Baking powder – ½ tsp
Cooking soda – ¼ tsp
Cocoa powder – 1 tsp (optional)
Cinnamon powder – a pinch
Honey – 1 tsp
Lemon juice – 1 tsp
Chopped fruits of Choice (Banana, apple, Pomegranate seeds) – As required

Method:
  1. Crush the biscuits in a bowl and add milk to make a smooth batter. Add baking powder, cooking soda, cocoa power in mix well. Pour the batter in greased muffin cups and airfryer these in preheated airfryer for 10 min at 160 degrees.
  2. Simultaneously, in a bowl mix all chopped fruits, honey, cinnamon powder and lemon juice. This will be stuffed in each muffin. Keep it aside till muffins are ready.
  3. Once muffins are ready, allow it to cool for some time. Scoop the centre portion of muffin to make space for the fruit stuffing. Once scooped, add the chopped fruit mixture in each muffin.
  4. Fruits muffins are ready to serve. These can be stored in refrigerator or at room temperature.


Tip – For the muffin stuffing, cream or chocolate sauce can also be a good alternative.  
Gobi Ke Dhanthal Ki Sabzi or Cauliflower StalksVegetable is very Indian vegetable which is prefect as a side dish along with the main course. Easy to make, interesting vegetable using the discarded stems of cauliflower.

Cauliflower stems/stalks – ½ kgs
Potato - 3 pcs
Green chili – 2 pcs
Jaggery  - small pcs
Tamarind pulp – 3 tsp
Ginger garlic paste – 1 tsp

Cumin seeds – ½ tsp
Salt, Red chili powder, Turmeric powder – as per taste

Method:
1.       Wash stem pcs in running water to remove any kind of mud sticking on it. Cut the stems into small pcs. Cut potato into small pcs.
2.       In a pressure cooker, heat little oil, sauté cumin seeds, ginger garlic paste, asfoetida. Add cauliflower stem pcs, potato, spices. Add little water and pressure cook for 5 min till the vegetable is soft.
3.       Once cooked, add tamarind pulp and jaggery. Cook for another 2 min. Serve hot with roti or bread.

Sugar – ½ cup
Grated/ sliced coconut – 1 tsp
Crushed dry fruits – 2 tsp
Crushed fennel seeds powder – 1 tsp

Method:

Grated cauliflower- 1 bowl
Grated Cabbage- 1 bowl
Chopped Spring Onion – 1 bowl
Washed and chopped Coriander – ½ Bowl
Grated carrot – ½ bowl
Corn flour – 2 tbsp
Wheat Flour – 2 tbsp
Cooking soda – a pinch
Green chilly sauce – 1 tsp
Tomato Ketchup – 1 tsp
Soya sauce – 2 tbsp

Method:

  1. In a bowl, mix all grated vegetable cauliflower, cabbage and carrot. Add half quantity of corn flour, wheat flour, 1 tbsp soya sauce and mix well. This is the Manchurian balls mixture
  2. Heat appe pan and put little oil in each section to prevent the mixture from sticking to the base of the pan. Put the Manchurian ball mixture in each section and cover the pan for 5 min. Flip over the appe Manchurian once cooked and cook for another 5 minutes. Manchurian balls are ready.
  3. For Manchurian gravy – Heat little oil in a Kadai or pan, sauté spring onions and coriander leaves for 2-3 min. Add water and corn flour mixture, soya sauce, salt. Cook till the gravy gets thick.
  4. Add Manchurian balls to the gravy and cook for 2 min. Dry appe Manchurian is ready to serve.



Shahi pudding is made up of Petha, an Indian sweet/mithai.  Petha pudding is an Indian dessert usually homemade, commonly served for dinners.

Ingredients:
Milk (Full cream/ Toned) – ½ liter
Petha – 150 gms
Cottage cheese – 150 gms
Sugar – 50 gms
Corn flour – 2 tsp
Edible food colour, green – a pinch
Dry fruits (Cashew nuts, almonds) – few pcs
Crushed cardamom – a pinch
Saffron – a pinch

Method:
1.       Dry roast all nuts till crisp. Crush it.
2.       In a heavy bottom pan, boil milk, cardamom powder, saffron and simmer to reduce to half the quantity. Add sugar once milk is reduced, cook for 2 min.
3.       Add mashed cheese and cook for another 2 min. Add grated petha and cook again for 2-3 min.
4.       Add corn flour in milk till it thickens. Switch off the flame. Let it cool. Add green colour and keep it in refrigerator for cooling. Serve cool and garnish with crushed dry fruits and petha pcs.

Mushrooms – ½ kgs
Chopped Garlic – 1 tbsp
Chopped Onions – ½ cup
Corns – 1 tbsp
Bread crumbs – 1 tbsp
Corn flour – 1 tbsp
Chopped Coriander leaves – a few
Butter – 1 tsp
Salt, Black pepper – As per taste

Method:
1.       Wash and dry the button mushrooms. Remove the stem and keep aside. Scoop the mushrooms.
2.       For the stuffing – Mix onions, garlic, coriander leaves, corns, chopped mushroom stems, butter, salt, black pepper.
3.       Stuff the mixture in scooped mushrooms and press slightly. In a toothpick, join 2 mushroom together and prepare all other mushroom sticks.
4.       Dip all the prepared mushroom sticks in a batter of corn flour and water. Coat with bread crumbs.
5.       Pre heat air fryer at 180 degrees. Place all mushrooms in air fryer for 15 min at 180 degrees. Once the top coat gets crisp, serve hot with ketchup.

Baby corns – 200 gms cut into cubes
Red bell pepper, Green bell pepper – 1 cup
Onion – 1 medium size diced
Crushed garlic – few cloves

Method:

Crushed oats – 1 cup
Softened Butter – ¾ cup
Honey – ¼ cup
Castor sugar – ¼ cup
Crushed nuts – ½ cup
Choco chips – ½ cup

Method:
1.       In a microwave safe bowl add half the quantity of butter, castor sugar, honey and oats. Mix all these ingredients.  
2.       Keep this mixture in microwave for 1 min. Take out the mixture, mix it and again keep it in microwave for another 1 min. This is done till oats are cooked and the raw taste disappear.
3.       Spread this mixture on a butter paper. The height of cookies can be adjusted as desired.
4.       In another microwave safe bowl, add remaining butter and choco chips and microwave for 30 sec. Mix again and keep for another 30 secs in microwave to get a chocolate puree. While hot, spread this mixture on top of oats mixture.
5.       Top it with crushed nuts and keep this material in refrigerator for 15 min till it is set.
6.       Once set, cut into squares or any other desired shape. Pack each pcs in packing material or serve just like that.

Boiled potato – ½ kgs
Bread slices – 2-3 pcs
Soaked sago (Sabudana) – 1 cup
Grated carrot – 1 cup
Salt, Red chili powder, Dry mango powder, Ajwain – as per taste
Crushed groundnuts – 2 tsp

Method:
  1. Mash potatoes, add moist bread pcs, soaked sago, grated carrot and all spices. Mix well and lastly add crushed groundnuts.  The material should be firm enough to hold the shape. Ensure that the mixture should not be too soft. Add more bread slices to make it firm.
  2. Prepare cutlets in any desired shape. Brush oil on tikkis. Preheat airfryer at 180 degrees and keep the cutlets or tikkis in airfryer at 180 degrees for 10 min.
  3. Once a golden brown crust is achieved, remove from the airfryer. Garnish with onions rings and tomato slices. Top with little coriander chutney.  Serve hot.

Chana dal vada are one of my favorite vada recipe that I remember since childhood days. In Chennai you will find these vada being served by eating joints across streets. Thus its a popular street food recipe in southern India.

Ingredients:
Chana Dal (Bengal Gram) – 1.5 cups
Beetroot – a small pcs
Rice flour – 2 tbsp
Ginger garlic paste – 1 tsp
Chopped onions – 1 cup
Curry leaves – a few
Red chili – 1 pcs
Salt, Fennel seeds – 1 tsp
Oil – for deep frying

Method:
1.       Soak chana dal for 4 hours and blend it in mixer grinder. Add ginger garlic paste, curry leaves, red chili, fennel seeds, beetroot in jar and prepare a paste.
2.       Add rice flour, salt and onions to the dal paste. Make small vadas of the prepared paste and deep fried the vadas till a golden brown colour is achieved.
3.       Another healthy options is to make appes using the same paste  in a appe pan. Ccover the appe pan and cook for 5 min.
4.       Serve hot with coconut chutney or tamarind chutney.

Grated coconut – 1 tsp
Grated garlic – ½ tsp
Grated/chopped ginger – ½ tsp

Red chili powder, Turmeric powder, salt – as per taste
Cumin seeds – ½ tsp
Tamarind pulp – 1 tsp

Method:
1.       In a soup maker, add dal, all spices and select the chunky mode.
2.       In a mixer jar, add coriander seeds, coconut, ginger, garlic, jiggery, tamarind pulp and make a paste.
3.       For the tadka, heat 1 tbsp of desi ghee, sauté cumin seeds and curry leaves along with hing.
4.       Mix the paste in dal an while serving, add the tadka on top. Serve masoor dal fry with roti or rice.

Chopped spinach – 1 cup
Rice – 1 cup
Split Green Gram (Moong Dal) – ½ cup
Washed Black Gram (Dhuli Urad dal) – ½ cup
Spilt Red Gram (Arhar dal) – ½ cup
Split Bengal Gram – ½ cup
Salt – 1 tsp
Ginger paste – 1 tsp

For Coconut chutney:
Desiccated coconut – 1 cup
Lemon juice – 1 tsp (optional)
Mustard seeds – 1/2tsp
Curry leaves – a few
Curd – 2 tsp

Method:
1.       Soak all lentils/dals for 6-7 hours. Rice should be soaked separately for 2-3 hours. Once the dals has puffed up well, make a paste by adding all these ingredients along with salt and ginger in mixer jar. The paste should be smooth and little thin. Add water to adjust the consistency.
2.       For coconut chutney – add coconut in grinding jar to make a thick chuntey. Splutter mustard seeds and curry leaves and top it on chutney. Adjust the consistency of chutney by adding curd.
3.       On a non stick pan or griddle, apply little oil to grease it. Pout a ladder full of dosa batter and spread it in circular motion to form a thin layer of dosa. Apply little oil on sides and center. Let dos cook for 2-3 min and once cooker flip over. Cook for another 2 min.
4.       Serve hot spinach dosa with coconut chuntey.

Boiled potatoes – 5-6 medium size
White bread slices – 5-6 pcs
Chopped Red and green capsicum – 2 cups
Sesame seeds- 3 tsp
Salt – as per taste

Method:
1.       Mash potatoes in a bowl and add salt, chaat masala. Mix well and keep aside.
2.       Prepare slurry of refined flour and water, a thick paste to coat the bread rolls.
3.       In a separate plate, mix chopped capsicum and sesame seeds.
4.       Remove the brown edge of the bread slice and flatten it up with help of rolling pin. Place stuffing of potato mixture on one side and roll it to get a cylindrical roll. Seal the edge with the flour mixture using brush. Coat the roll with with flour mixture on top and put in the mixture of capsicum, so that it coats all over the bread roll.
5.       Preheat the airfryer at 180 degrees and place all the bread rolls inside it. Air fry at 160 degrees for 5 min and serve hot with tomato ketchup.

Baby Corns Cheese Veg Tacos is easy snack recipe which are can be made with ready to use Cornitos Taco shells. Taco shells can be stuffed with any kind of stuffing to make interesting snack recipes. Taco shells had reduced the process of making the base of tacos as well.

Ingredients:
Baby corns – 200 gms cut into cubes
Red bell pepper, Green bell pepper – 1 cup
Onion – 1 medium size diced
Crushed garlic – few cloves
Curry leaves – 4-5 leaves
Black pepper powder – a pinch
Red chili powder, Salt – as per taste
Tomato ketchup – 1 tsp
Cornitos Taco Shells – 2-4 pcs depending upon the tacos to be prepared
Cheese cubes – for garnishing

Method:
1.       Steam baby corns in a pressure cooker with little salt.
2.       Simultaneously, in a non –stick pan, sauté garlic, curry leaves, bell pepper, onion for 5 min. Add steamed bell pepper. Add all seasonings and cook for another 5 min. Switch off the flame and once cooled, add tomato ketchup.
3.       Microwave Taco Shells for 30 sec to 1 min or put shells in preheated oven for 2 min to make these crispier. Once ready, stuff stir fry baby corns in each Taco shells. Garnish with cheese cubes and Stuffed Taco shells are ready to serve.



Baingan ke pakore is a delicious, yummy pokoras generally prepared in Indian Punjabi households. These are a big change from usual onion and potato pakoras.

Ingredients:
Brinjal/ Eggplant – 1 pcs
Gram flour – ½ cup
Rice flour – ½ cup
Crushed garlic – 1 tsp
Black sesame seeds – 1 tsp
Cooking soda – a pinch (optional)
Salt, Red Chili Powder, Ajwain, Chaat masala -  As per taste
Oil for frying

Method:
1.       Wash brinjal and cut into semicircles pcs. Even circle pcs can be cut as well. Soak these in water to avoid oxidation.
2.       For the batter mix both flours, all spices and make a smooth batter with water. Add sesame seeds and add a pinch of cooking soda.
3.       Keep oil for heating. Drain the water from the brinjals pcs and sprinkle little salt and red chili powder on these pcs. Dip brinjal pcs in the prepared batter and deep fry on medium flame.
4.       Serve hot with sauce or chutney and garnish with chopped green leaves.




Kathi roll is very common and quick recipe which you can be prepared with any stuffing but we made it healthy by using wheat flour roti and not refined flour roti.

Ingredients:
Whole wheat roti/ Harvest Ready roti – 2 pcs
Shredded Cauliflower – 1 cup
Sliced capsicum – ½ cup
Sliced carrots – ½ cup
Diced Paneer – ½ cup
Salt, red chili powder – ¼ tsp
Tomato ketchup – ½ tsp
Soya Sauce – ½ tsp

Method:
1.       In a Kadai/ pan, heat oil and sauté all vegetables, spices, paneer pcs. Add soya sauce. And cook for just 5 min.
2.       On the surface of roti, spread a layer of tomato ketchup. Place the stuffing in the centre and roll the roti to make cylindrical roll and seal with help of tooth prick. Serve with cucumber slices.
 





Sabudana Khichdi is very common recipe which is usually prepared during fast or in Navratra days. It is very healthy, filling meal to take during these days.

Ingredients:
Sago/ Sabudana – 1 cup (Soaked)
Thinly sliced vegetables (Carrots, beans) – 1 cup
Roasted Groundnuts – ¼ cup
Diced Potato – ½ cup
Cumin seeds, Red chili powder, Salt – ½ tsp each
Lemon juice – ½ tsp
Curry leaves – a few
Ghee/ Oil – 1 tsp

Method:
1.       Soak sabudana for 2-3 hrs till it puffs up nicely. Then spread it on a muslin cloth till it is dried completely and is not sticking.
2.       In a non stick pan heat little ghee. Sauté cumin seeds, curry leaves, vegetables for 5 min. Add salt, red chilly powder. Mix well. Add sabudana and little water. Cook it for 5—10 min.
3.       Once done, sprinkle lemon juice and garnish with crushed roasted groundnuts. Serve hot.



Spinach pinwheels is a very innovative and interesting tea time snack recipe which is generally deep fried as all tasty things are always fried, but we just can’t do that. S we had air fried these pinwheels to maintain health.  Also these varied kind of flours used and spinach makes this snack very very healthy.. so keep munching…

Ingredients:
Rice flour – 1 cup
Wheat flour – 1 cup
Soyabean flour – 1 cup
Chopped spinach – 1 cup
Coriander seeds- 1 tsp
Sesame seeds – 1 tsp
Cumin seeds (zeera) , red chili powder, salt – ½ tsp each
Oil – 1 tsp
For tempering – 1 tsp oil, few curry leaves

Method:
1.       Make a soft dough of all the ingredients using water. Make long thin cylindrical tubes and roll it to form pinwheels. Prepare all spinach pinwheels in the same manner.
2.       Place all pinwheels on a foil paper and air fry these at 180 degrees for 7 min. Ensure to preheat the airfryer before using. Once brown, remove the pinwheels and allow to cool down slightly.
3.       Prepare the tempering by heating little oil in a Kadai and splutter curry leaves. Put all the air fried pinwheels in the tempering and sauté for 2 min. Serve at room temperature with tea.
