Baked Veg Bread Rolls is a very simple airfryer recipe which is a perfect snack or a breakfast recipe. Normally bread rolls are deep fried but air frying the rolls makes these even more crispy and healthy.

Ingredients:
Boiled potatoes – 5-6 medium size
White bread slices – 5-6 pcs
Chopped Red and green capsicum – 2 cups
Sesame seeds- 3 tsp
Salt – as per taste
Refined flour – 2 tsp
Chaat masala – ½ tsp

Method:
1.       Mash potatoes in a bowl and add salt, chaat masala. Mix well and keep aside.
2.       Prepare slurry of refined flour and water, a thick paste to coat the bread rolls.
3.       In a separate plate, mix chopped capsicum and sesame seeds.
4.       Remove the brown edge of the bread slice and flatten it up with help of rolling pin. Place stuffing of potato mixture on one side and roll it to get a cylindrical roll. Seal the edge with the flour mixture using brush. Coat the roll with with flour mixture on top and put in the mixture of capsicum, so that it coats all over the bread roll.
5.       Preheat the airfryer at 180 degrees and place all the bread rolls inside it. Air fry at 160 degrees for 5 min and serve hot with tomato ketchup.


Corn potato kebabs are is a lovely snack recipe which can be prepared anytime but generally these are deep fried. To avoid oil, we have prepared corn potato kebabs in LG convection microwave oven at the charcoal mode. The result was crisp kebabs with soft interior. Yummy yummy..

Ingredients:
Sweet corns – 100 gms steamed
Boiled potato – 4 medium size pcs
Lemon juice – 1 tsp
Green Chili – 1 pcs
Softened butter – 1 tsp
Bread crumbs – 2 tsp
Salt, Red chili powder, Chaat masala powder – ½ tsp each

Method:
1.       Mash potato and add all ingredients well. Make oblong shape kebabs and place these on multipurpose plate/try of microwave. Place the plate on high rack in microwave. Set the Charcoal mode for making corn kebabs at menu no. 14. Once beeped, keep the corn kebabs for another 9 minutes.
2.       Once the surface of corn kebab is crisp, remove the corn kebabs from the plate and serve hot with ketchup or chutney of choice.




Vegetable oats upma is a fiber rich breakfast recipe which can be prepared in minutes and is damm healthy. Vegetable oats upma is quite filling as it keeps you satiated for long time.

Ingredients:
Oats – 1.5 cup/ 250 gms
Chopped vegetables (Beans, Carrots, Beet root, Onion) – 1 cup/ 200 gms
Chopped Tomatoes – 2 medium size pcs
Curry leaves – a few
Mustard seeds – ½ tsp
Cumin seeds – 1 tsp
Salt – 1 tsp
Lemon juice – 1 tsp

Method:
  1. Heat 1 tsp oil in a Kadai, splutter cumin seeds, curry leaves. Sauté vegetables, tomatoes. Add oats and mix well. Add 3 cups or double the quantity of water. Cook for 10 min till water evaporates.
  2. Once ready, add lemon juice and serve hot for breakfast.



Baby Corns Cheese Veg Tacos is easy snack recipe which are can be made with ready to use Cornitos Taco shells. Taco shells can be stuffed with any kind of stuffing to make interesting snack recipes. Taco shells had reduced the process of making the base of tacos as well.

Ingredients:
Baby corns – 200 gms cut into cubes
Red bell pepper, Green bell pepper – 1 cup
Onion – 1 medium size diced
Crushed garlic – few cloves
Curry leaves – 4-5 leaves
Black pepper powder – a pinch
Red chili powder, Salt – as per taste
Tomato ketchup – 1 tsp
Cornitos Taco Shells – 2-4 pcs depending upon the tacos to be prepared
Cheese cubes – for garnishing

Method:
1.       Steam baby corns in a pressure cooker with little salt.
2.       Simultaneously, in a non –stick pan, sauté garlic, curry leaves, bell pepper, onion for 5 min. Add steamed bell pepper. Add all seasonings and cook for another 5 min. Switch off the flame and once cooled, add tomato ketchup.
3.       Microwave Taco Shells for 30 sec to 1 min or put shells in preheated oven for 2 min to make these crispier. Once ready, stuff stir fry baby corns in each Taco shells. Garnish with cheese cubes and Stuffed Taco shells are ready to serve.



Baingan ke pakore is a delicious, yummy pokoras generally prepared in Indian Punjabi households. These are a big change from usual onion and potato pakoras.

Ingredients:
Brinjal/ Eggplant – 1 pcs
Gram flour – ½ cup
Rice flour – ½ cup
Crushed garlic – 1 tsp
Black sesame seeds – 1 tsp
Cooking soda – a pinch (optional)
Salt, Red Chili Powder, Ajwain, Chaat masala -  As per taste
Oil for frying

Method:
1.       Wash brinjal and cut into semicircles pcs. Even circle pcs can be cut as well. Soak these in water to avoid oxidation.
2.       For the batter mix both flours, all spices and make a smooth batter with water. Add sesame seeds and add a pinch of cooking soda.
3.       Keep oil for heating. Drain the water from the brinjals pcs and sprinkle little salt and red chili powder on these pcs. Dip brinjal pcs in the prepared batter and deep fry on medium flame.
4.       Serve hot with sauce or chutney and garnish with chopped green leaves.




Kathi roll is very common and quick recipe which you can be prepared with any stuffing but we made it healthy by using wheat flour roti and not refined flour roti.

Ingredients:
Whole wheat roti/ Harvest Ready roti – 2 pcs
Shredded Cauliflower – 1 cup
Sliced capsicum – ½ cup
Sliced carrots – ½ cup
Diced Paneer – ½ cup
Salt, red chili powder – ¼ tsp
Tomato ketchup – ½ tsp
Soya Sauce – ½ tsp

Method:
1.       In a Kadai/ pan, heat oil and sauté all vegetables, spices, paneer pcs. Add soya sauce. And cook for just 5 min.
2.       On the surface of roti, spread a layer of tomato ketchup. Place the stuffing in the centre and roll the roti to make cylindrical roll and seal with help of tooth prick. Serve with cucumber slices.
 





Sabudana Khichdi is very common recipe which is usually prepared during fast or in Navratra days. It is very healthy, filling meal to take during these days.

Ingredients:
Sago/ Sabudana – 1 cup (Soaked)
Thinly sliced vegetables (Carrots, beans) – 1 cup
Roasted Groundnuts – ¼ cup
Diced Potato – ½ cup
Cumin seeds, Red chili powder, Salt – ½ tsp each
Lemon juice – ½ tsp
Curry leaves – a few
Ghee/ Oil – 1 tsp

Method:
1.       Soak sabudana for 2-3 hrs till it puffs up nicely. Then spread it on a muslin cloth till it is dried completely and is not sticking.
2.       In a non stick pan heat little ghee. Sauté cumin seeds, curry leaves, vegetables for 5 min. Add salt, red chilly powder. Mix well. Add sabudana and little water. Cook it for 5—10 min.
3.       Once done, sprinkle lemon juice and garnish with crushed roasted groundnuts. Serve hot.



Spinach pinwheels is a very innovative and interesting tea time snack recipe which is generally deep fried as all tasty things are always fried, but we just can’t do that. S we had air fried these pinwheels to maintain health.  Also these varied kind of flours used and spinach makes this snack very very healthy.. so keep munching…

Ingredients:
Rice flour – 1 cup
Wheat flour – 1 cup
Soyabean flour – 1 cup
Chopped spinach – 1 cup
Coriander seeds- 1 tsp
Sesame seeds – 1 tsp
Cumin seeds (zeera) , red chili powder, salt – ½ tsp each
Oil – 1 tsp
For tempering – 1 tsp oil, few curry leaves

Method:
1.       Make a soft dough of all the ingredients using water. Make long thin cylindrical tubes and roll it to form pinwheels. Prepare all spinach pinwheels in the same manner.
2.       Place all pinwheels on a foil paper and air fry these at 180 degrees for 7 min. Ensure to preheat the airfryer before using. Once brown, remove the pinwheels and allow to cool down slightly.
3.       Prepare the tempering by heating little oil in a Kadai and splutter curry leaves. Put all the air fried pinwheels in the tempering and sauté for 2 min. Serve at room temperature with tea.





Rasmalai is one of the most favorite Indian dessert malai recipe. Normally, rasmalai is make using sugar syrup and is loaded with sugar. But we have tried steamed version of rasmalai which is healthier and more tasty.

Ingredients:
Milk – 1 liter
Cheese/ Paneer – 50 gms
Sugar – 1 cup
Castor sugar – ½ cup
Black pepper – ½ tsp
Cashew nuts – 5-6 pcs
Almonds – 5-6 pcs
Melon seeds – 1 tsp
Sauf powder – 1 tsp
Saffron - a pinch

Method:
  1. Rabri/ Rabdi - Keep the milk for simmering till the consistency reduces to half the quantity. Keep on stirring in between to avoid sticking of milk at edges and at the base.
  2. In a mixture jar, add almonds, cashew nuts, melon seeds, black pepper, sauf powder, little water. Make a paste of all these ingredients. Sieve this paste to get a thick paste and discard the left over. Add this paste in the boiling milk and keep simmering the rabri. Once thickend, add sugar at this stage and cook for 5 more min.
  3. Rasmali pcs - Crush cheese or make fresh cheese/ cheena (using milk). Add castor sugar. Mix well. Make small balls or pcs of this mixture. And steam these pcs in a steamer. Steam for 5 min.
  4. Add the rasmalai pcs in the simmering milk and cook for 2-3 min. Once cooked, cool for some time. Serve chilled. Garnish with black raisins, almonds, chopped pistachios, rose petals.  






Vegetable dip is the easiest recipe which can be prepared by all ages, be it kid or elders. It requires one very important ingredient i.e. hung curd and then you can mix any vegetable into it. Vegetable dip goes with garlic bread, nachos, chips, rusk, or even Indian papad.

Hung curd – ½ cup
Grated vegetables (carrot, cabbage, cucumber, capsicum) – ½ cup total
Mustard seeds powder – ¼ tsp
Black pepper – ¼ tsp

  1. Mix all ingredients well and store it in refrigerator. Spread on garlic bread, or serve with chips or rusk.
