Ingredients:
Mushrooms – ½ kgs
Chopped Garlic – 1 tbsp
Chopped Onions – ½ cup
Corns – 1 tbsp
Bread crumbs – 1 tbsp
Corn flour – 1 tbsp
Chopped Coriander leaves – a few
Butter – 1 tsp
Salt, Black pepper – As per taste

Method:
1.       Wash and dry the button mushrooms. Remove the stem and keep aside. Scoop the mushrooms.
2.       For the stuffing – Mix onions, garlic, coriander leaves, corns, chopped mushroom stems, butter, salt, black pepper.
3.       Stuff the mixture in scooped mushrooms and press slightly. In a toothpick, join 2 mushroom together and prepare all other mushroom sticks.
4.       Dip all the prepared mushroom sticks in a batter of corn flour and water. Coat with bread crumbs.
5.       Pre heat air fryer at 180 degrees. Place all mushrooms in air fryer for 15 min at 180 degrees. Once the top coat gets crisp, serve hot with ketchup.

Ingredients:
Khoya Barfi – 5-6 pcs
Chopped nuts – 2 tsp
Wheat flour dough – a bowl
Oil/ Ghee – 2 tsp

Method:
  1. Mash barfi pcs and mix the nuts to prepare the stuffing for the paratha.
  2. Roll out 2 chapati and stuff the barfi inside the rotis. Roll the paratha smoothly using dry flour, if required.
  3. Place the paratha on hot griddle/ tawa and cook the paratha by applying oil on both sides, till crisp. Serve hot.

Ingredients:
Baby corns – 200 gms cut into cubes
Red bell pepper, Green bell pepper – 1 cup
Onion – 1 medium size diced
Crushed garlic – few cloves
Curry leaves – 4-5 leaves
Black pepper powder – a pinch
Red chili powder, Salt – as per taste
Tomato ketchup – 1 tsp


Method:
1.       Steam baby corns in a pressure cooker with little salt.
2.       Simultaneously, in a non –stick pan, sauté garlic, curry leaves, bell pepper, onion for 5 min. Add steamed bell pepper. Add all seasonings and cook for another 5 min. Switch off the flame and once cooled, add tomato ketchup.

No Bake Chocolate Oats Cookies are wonderful, healthy and yet very easy to make cookies. These are made in microwave and need no preparation.

Ingredients:
Crushed oats – 1 cup
Softened Butter – ¾ cup
Honey – ¼ cup
Castor sugar – ¼ cup
Crushed nuts – ½ cup
Choco chips – ½ cup

Method:
1.       In a microwave safe bowl add half the quantity of butter, castor sugar, honey and oats. Mix all these ingredients.  
2.       Keep this mixture in microwave for 1 min. Take out the mixture, mix it and again keep it in microwave for another 1 min. This is done till oats are cooked and the raw taste disappear.
3.       Spread this mixture on a butter paper. The height of cookies can be adjusted as desired.
4.       In another microwave safe bowl, add remaining butter and choco chips and microwave for 30 sec. Mix again and keep for another 30 secs in microwave to get a chocolate puree. While hot, spread this mixture on top of oats mixture.
5.       Top it with crushed nuts and keep this material in refrigerator for 15 min till it is set.
6.       Once set, cut into squares or any other desired shape. Pack each pcs in packing material or serve just like that.

Ingredients:
Boiled potato – ½ kgs
Bread slices – 2-3 pcs
Soaked sago (Sabudana) – 1 cup
Grated carrot – 1 cup
Salt, Red chili powder, Dry mango powder, Ajwain – as per taste
Crushed groundnuts – 2 tsp

Method:
  1. Mash potatoes, add moist bread pcs, soaked sago, grated carrot and all spices. Mix well and lastly add crushed groundnuts.  The material should be firm enough to hold the shape. Ensure that the mixture should not be too soft. Add more bread slices to make it firm.
  2. Prepare cutlets in any desired shape. Brush oil on tikkis. Preheat airfryer at 180 degrees and keep the cutlets or tikkis in airfryer at 180 degrees for 10 min.
  3. Once a golden brown crust is achieved, remove from the airfryer. Garnish with onions rings and tomato slices. Top with little coriander chutney.  Serve hot.

Chana dal vada are one of my favorite vada recipe that I remember since childhood days. In Chennai you will find these vada being served by eating joints across streets. Thus its a popular street food recipe in southern India.

Ingredients:
Chana Dal (Bengal Gram) – 1.5 cups
Beetroot – a small pcs
Rice flour – 2 tbsp
Ginger garlic paste – 1 tsp
Chopped onions – 1 cup
Curry leaves – a few
Red chili – 1 pcs
Salt, Fennel seeds – 1 tsp
Oil – for deep frying

Method:
1.       Soak chana dal for 4 hours and blend it in mixer grinder. Add ginger garlic paste, curry leaves, red chili, fennel seeds, beetroot in jar and prepare a paste.
2.       Add rice flour, salt and onions to the dal paste. Make small vadas of the prepared paste and deep fried the vadas till a golden brown colour is achieved.
3.       Another healthy options is to make appes using the same paste  in a appe pan. Ccover the appe pan and cook for 5 min.
4.       Serve hot with coconut chutney or tamarind chutney. 



It is very interesting to know, how to Make Masoor Dal Fry in Soup Maker. We have tried to break the notion that soup maker can only cook soups. So tried this interesting dal made with tamarind and jaggery.

Ingredients:
Masoor Dal – 1 cup (soaked for 2 hrs)
Grated coconut – 1 tsp
Grated garlic – ½ tsp
Grated/chopped ginger – ½ tsp
Coriander seeds – ½ tsp
Jaggery – a small pcs
Red chili powder, Turmeric powder, salt – as per taste
Cumin seeds – ½ tsp
Tamarind pulp – 1 tsp
Hing/ Asfoetida – a pinch

Method:
1.       In a soup maker, add dal, all spices and select the chunky mode.
2.       In a mixer jar, add coriander seeds, coconut, ginger, garlic, jiggery, tamarind pulp and make a paste.
3.       For the tadka, heat 1 tbsp of desi ghee, sauté cumin seeds and curry leaves along with hing.
4.       Mix the paste in dal an while serving, add the tadka on top. Serve masoor dal fry with roti or rice.

Parle - G Biscuits - 20
Milk - 1 cup / 240 ml
Baking Powder - 1 tsp
Cooking soda - 1/4 tsp
Sugar - 3 tsp (optional)
chocolate sauce - 1 tsp

Method:
1.       Soak Parle –G biscuits in milk for 10 min till the biscuits get soft. Mix well to for ma smooth batter.
2.       Add sugar and chocolate sauce. Mix again and lastly add baking powder.
3.       Pour the batter in preheated greased sandwich maker and cook for 5 min.
5.       Once baked, remove the sandwich cakes and let them cool completely.



Palak dosa or spinach dosa is a delicious and healthy dosa recipe usually served as Indian breakfast. The mixture of all kinds of dals or lentils along with spinach makes it very healthy.

Ingredients:
Chopped spinach – 1 cup
Rice – 1 cup
Split Green Gram (Moong Dal) – ½ cup
Washed Black Gram (Dhuli Urad dal) – ½ cup
Spilt Red Gram (Arhar dal) – ½ cup
Split Bengal Gram – ½ cup
Salt – 1 tsp
Ginger paste – 1 tsp

For Coconut chutney:
Desiccated coconut – 1 cup
Lemon juice – 1 tsp (optional)
Mustard seeds – 1/2tsp
Curry leaves – a few
Curd – 2 tsp

Method:
1.       Soak all lentils/dals for 6-7 hours. Rice should be soaked separately for 2-3 hours. Once the dals has puffed up well, make a paste by adding all these ingredients along with salt and ginger in mixer jar. The paste should be smooth and little thin. Add water to adjust the consistency.
2.       For coconut chutney – add coconut in grinding jar to make a thick chuntey. Splutter mustard seeds and curry leaves and top it on chutney. Adjust the consistency of chutney by adding curd.
3.       On a non stick pan or griddle, apply little oil to grease it. Pout a ladder full of dosa batter and spread it in circular motion to form a thin layer of dosa. Apply little oil on sides and center. Let dos cook for 2-3 min and once cooker flip over. Cook for another 2 min.
4.       Serve hot spinach dosa with coconut chuntey.
 
Makki Korma or Corn ki Sabzi is very simple Indian vegetable recipe which goes best with roti or bread. Easy to cook and yummy to eat!!!

Ingredients:
Sweet corns – 200 gms (steamed)
Peas – 100 gms
Chopped tomato – 200 gms/ 1 cup
Chopped onions – 100 gms/ half cup
Curd + cream – 150 gms / ¾ cup
Salt, red chili powder, garam masala – As per taste
Vegetable masala – ½ tsp (optional)
Green chili – 2 pcs
Oil- 1 tsp

Method:
1.       Heat oil in a Kadai or non stick pan. Saute onions, peas, corns, green chili. Add seasoning as per taste and cook for 2 min.
2.       Add tomatoes and cook it till it gets soft. Add cream and curd mixture and cook for 5- 10 min till the vegetable is cooked properly. Serve hot with roti or bread.
