Gobi Ke Dhanthal Ki Sabzi or Cauliflower StalksVegetable is very Indian vegetable which is prefect as a side dish along with the main course. Easy to make, interesting vegetable using the discarded stems of cauliflower.

Ingredients:
Cauliflower stems/stalks – ½ kgs
Potato - 3 pcs
Green chili – 2 pcs
Jaggery - small pcs
Tamarind pulp – 3 tsp
Ginger garlic paste – 1 tsp
Asfoetida/ Hing – a pinch
Cumin seeds – ½ tsp
Salt, Red chili powder, Turmeric powder – as per taste
Oil – 1 tsp
Method:
1. Wash stem pcs in running water to remove any kind of mud sticking on it. Cut the stems into small pcs. Cut potato into small pcs.
2. In a pressure cooker, heat little oil, sauté cumin seeds, ginger garlic paste, asfoetida. Add cauliflower stem pcs, potato, spices. Add little water and pressure cook for 5 min till the vegetable is soft.
3. Once cooked, add tamarind pulp and jaggery. Cook for another 2 min. Serve hot with roti or bread.
