Ingredients:
Dates/ Khajoor - 1 cup 
Green cardamom, black cardamom, Cinnamon stick Powder - 1/2 tsp
Milk - 1 glass

Method:
1. Seedless dates are preferred in this recipe, however if you have dates with seeds, then remove the seeds from dates by slicing it.
2. If the quality of dates is hard, then soak it in 1/4 cup milk for half hour to soften it. Else good quality dates are very soft, which can be used directly.
3. Heat 1/2 glass of milk in a pan along with dates for 10-15 min till it becomes soft. 
4. Cool down the date milk mixture and blend smooth in the mixer jar. 
5. Heat the remaining quantity of milk in the same pan. Add the power and blended dates mixture and simmer for 5 minutes on medium flame. 
6. Hot nutritious khajoor milk is ready to serve.

Ingredients:
Popcorn kernels - 150 gms
Jaggery - 150 gms (quantity can be reduced as per liking)
Chopped Cashewnuts - 2 tsps
Sesame seeds - 1 tsp
Cardamom powder - 1/4 tsp
Red chili powder - 1/4 tsp (optional)

Method:
1. Heat 1 tsp oil in a kadai and add popcorn kernels. Cover the kadai with a lid and keep it on medium flame. Let the popcorns pop up nicely. Popcorns will be ready in few minutes.
2. Once the popcorns are ready remove from the kadai.
3. In the same kadai, melt jaggery, keep on moving the jaggery to avoid burning. Add spices in melted jaggery. Mix well till there are no lumps in jaggery.
4. Remove the kadai from flame and add cashewnuts, sesame seeds and popcorns. Mix together with light hand to avoid crushing of the popcorns, till popcorns are coated well. While mixture is still hot, separate the popcorns which stick to each other. 
5. Jaggery flavoured popcorns are ready to serve.

Ingredients:
Tomatoes - 1 kg ripe tomatoes
Chopped onions - 100 gms
Garlic cloves - 8-10 pcs
Spices ( Cloves, black cardamon, Cinnamon stick) - 3 pcs
Black  pepper - 8-10 pcs
Red Chili powder - 1/2 tsp
Cumin seeds - 1 tsp
Salt - 1-2 tsp
Sugar - 2 tsp
Sodium Benzoate - 1/2 tsp (to be used in case of preservation)
Vinegar - 50 ml

Method:
1. Wash and chop tomatoes. In a pressure cooker, add tomatoes, onions, garlic and little water. Cook till tomatoes becomes soft and pulpy.
2. Sieve the tomato puree and cook again with all spices. Tie the spices in a muslin cloth and add in puree. Cook for 15-20 for all flavours to get induced in the puree. 
3. Once the puree gets thick, remove the bouquet garni and add rest of the ingredients. Cook till sauce like consistency is achieved. 
4. Once tomato ketchup is ready, switch off the flame and add sodium benzoate mixed in little puree. This is a preservative, which can be avoided as well. 
5. Sterilize the glass jars in which tomato ketchup needs to be stored.
6. Serve this homemade tomato ketchup with fries, sandwiches etc. 




Amla chutney is a nutritious, healthy, simple and a quick recipe. It is best to have this chutney in winters as Gooseberry is available in plenty in India and it provides immunity to our body, being rich source of vitamin C. Spread this chutney on bread slice or roti and Enjoy!!

Amla/ Gooseberry - 250 gms
Jaggery - 200 gms
Cardamom powder - 1/4 tsp
Red chili powder - 1/4 tsp
Salt - 1 tsp
Rock salt - 1 tsp

Method:
1. Steam amla/gooseberry for 10-15 min and remove the seeds from center. Cut into small pcs
2. In a mixer jar, grind amla to make a paste.
3. Heat a kadai/non stick pan, add amla paste along with all the ingredients.
4. Cook the paste on medium flame and keep on moving the chutney to avoid sticking at the base or sides of the pan.
5. After 10-15 min, chutney will be ready.

Note - Instead of jaggery sugar can also be added.

4. Put the rice cooker and cook mode and once the mode changes to warm then hot steaming biryani is ready.

Maggi Atta Noodles - 3 packets

2. Once milk thickens, add sugar and cook for another 10 min. Once ready, keep aside for cooling. 
3. For chocolate shots - melt dark compound in a microwave. Take a small disposable glass and put a slit at edge. Pour the melted chocolate inside the glass and coat it completely. Take out the extra chocolate. Keep this cup in freezer for about 5 min till it sets. Once set, tear away the cup carefully. Chocolate shot is ready.
4. Pour the cooled kheer in chocolate shots and garnish with chocolate savings. Serve cold.

Castor Sugar - 200 gms

Method:
1. Steam amla and remove the seeds. Cut into small pcs and cool all the pcs completely. 
2. Once cooled, cover the pcs with castor sugar and keep it as it is for 2-3 days until amla leaves water.
3. After 2-3 days, sieve the amla and separate the water. Do not discard the amla water as it is very nutritious, drink it.
4. Spread these amla pcs on a perforated plate or on a sheet and sun dry it. Prevent the amla from drying completely as otherwise amla pcs will get really hard. So retain little moisture but amla pcs should not be too sticky.
5. Once dried, sprinkle more castor sugar to coat the pcs with sugar. Sweet amla candies are ready to serve. Store these in refrigerator.for better shelf life.

Soaked Rice - 1 cup
Soaked Urad dal / Split Black Gram- 1/2 cup
Fenugreek seeds/ Methi dana - 1/4 tsp

Method:
1. Soak rice and urad dal for 2-3 hrs. 
2. Take liquidising jar of Maharaja Whiteline Easy lock king mixer grinder. Add more quantity of rice and less quantity of dal in the jar along with fenugreek seeds. Grind to form a smooth batter. Add water by removing the centre section of the jar. 
3. Once the dosa batter is ready, keep it aside for fermentation at humid place till the batter puffs up. It will take at least 3-4 hours, depending upon the humidity.
4. After fermentation, heat a nonstick pan or tawa. Grease with little oil and pour 2 ladder full of the batter and spread in circular manner as shown in the video. (check out few tips in the video)
5. Once the dosa gets crisp from once side, fold it and remove from the flame.
6. Serve hot crispy dosa with sambhar and coconut chutney.

2. Heat little oil in a kadai, Saute ginger garlic paste, chopped onions. Add salt and red chilly powder and lastly add coconut milk. Cook at medium to low flame for 10 -15 min, till the gravy thickens. 
3. Simultaneously prepare desi ghee tempering by heating ghee in a pan, splutter coriander seeds. Switch off the flame and add coloured red chilli powder. 
4. Serve the prepared coconut milk paneer curry with chapati. Topped with the tempering.  
Enjoy rich, flavoured paneer curry as a main course option.

Ingredients:
Besan/ Gram Flour - 200 gms
Castor sugar - 100 gms
Desi ghee - 2 tbsp (Add more if required)
Semolina/ suji - 1 tsp ( added for coarseness) 
Chopped nuts -  1 tbsp
Cardamom powder - a pinch

Method:
1. In a microwave safe bowl, heat desi ghee for 30 sec.
2. Add besan and suji in desi ghee. Microwave for 1 min. Mix it nicely.
3. Microwave the mixture for 1 min and mix again. 
4. Add chopped nuts, cardamom powder in the besan mixture and microwave again for 1 min. At this stage a nice aroma of roasted gram flour will be there.
5. Lastly microwave mixture for 20 sec, Be careful now to avoid any burning of besan.
6. Cool down the mixture. Once little cool, add castor sugar. Break any kind of lumps of sugar. Mix sugar and besan mixture nicely and prepare besan ladoos in the desired size. 
7. Garnish besan ladoo with melon seeds and almond slice.

Desi Ghee making is a simple process using only 1 ingredient - Malai or cream. This is the purest desi ghee which can put to enumerable uses. It is said that pure ghee enhances physical and mental strength thus keeps the body healthy. But the quantity of ghee should be limited due to fat content involved. However pure ghee can last for a longer duration of time. It can be stored without refrigeration.

Ingredient:
Malai or homemade cream - 1/2 kgs

Method:
1. Collect cream or malai everyday at least for 7-10 days.
2. Churn the malai using hand blender/ food processor/ using ladder , which is a manual process. churn till the stage butter is extracted from malai and water/ butter milk is left behind.
3. Remove the butter and add cold water. Wash the butter with cold water 2-3 times. This washing process aids ghee making and the quantity of the residual mixture left behind the ghee is also reduced.
4. The left over buttermilk can be used to make kadhi/ or can be used to prepare homemade paneer.
5. After washing the butter, keep the butter in kadai on medium flame. Cook till the ghee separates.
6. Lets the ghee cool down completely.
7. Sieve the ghee in an airtight container or steel container. 
8. Left over residual mixture or khoya can be used to make khasta roti/ sweet roti.

   


Lauki Soup is a light soup which helps to reduce weight. This is a perfect weight loss recipe. Bottle gourd soup is low in calories and fats but keep ones full for longer time, thus extra munching in between meals are avoided. This is not a creamy soup which adds to calories, thus cream, butter or potato are not added in the soup.

Ingredients:
Bottle Gourd/ Lauki - 250 gms
Salyt, Black pepper - As per taste
Diced Onion - 1/2 pcs
Coriander seeds - 1/2 tsp
Cumin seeds -1/2 tsp
Crushed garlic cloves - 1-2 pcs
Whole wheat flour - 1 tbsp 

Method:
1. Heat 1 tsp oil in pressure cooker, saute coriander and cumin seeds, garlic, onion as well. Add all other ingredients along with double the quantity of water.
2. Pressure cook for 2-3 whistles.
3. Blend the soup and sieve the soup (optional).
4. Garnish with coriander leaves. Healthy soup is ready to serve.
