Ingredients:
Cauliflower Florets – of 1 cauliflower
Rice flour – 2 tbsp
Milk – ½ cup
Capsicum – 1 pcs cut into big pcs
Chopped Onions – 1 cup
Tomato puree – 1 cup
Cumin seeds/ Ajwain – ½ tsp
Salt, Red chilli powder – As per taste
Ginger Garlic paste/ Chopped – 1 tsp

Method:
1.       In a pan, heat 1 cup water along with milk. Add ½ tsp salt and add cauliflower florets. Cook it for 5 min on medium flame till cauliflower cooks properly.
2.       Strain the cauliflower and save the water milk mixture. Set aside for cooling. Once cooled, sprinkle rice flour over cauliflower pcs and coat the pcs completely.
3.       In the water and milk mixture, add rice flour and prepare a batter of medium consistency, neither too thick nor too thin. Add little red chilly power and salt along with 1 tsp oil for glazing.
4.       Coat the cauliflower pcs in the batter and air fry these pcs in preheated airfryer at 180 degrees for 5 min.
5.       For the gravy, sauté ginger garlic paste in 1 tbsp oil. Add onions, tomato puree and sauté till oil separates.  Add spices as per taste, capsicum. Avoid over cooking capsicum to maintain the colour. Add tomato ketchup but it is optional.
6.       Add airfryer cauliflower pcs in the gravy and cook for 1 min. Maintain the crispness of cauliflower and capsicum.
7.       Serve hot.

Ingredients:
Yellow Corn Flour – 250 gms
Chopped spring onions – 1 cup
Grated Cabbage – 1 cup
Grated Carrot – 1 cup
Grated Broccoli – 1 cup
Salt, Carom seeds, cumin seeds, red chilly powder/flakes – As per taste

Method:
  1. Mix all the veggies and spices. Add corn flour or makki ka atta. Using little warm water, prepare a nice dough. While kneading the dough, add 1 tsp oil. Knead a soft and form dough.
  2. Make small balls of the dough. On a flat surface, spread a plastic sheet. Press the dough ball using the fingers and keep on pressing the roti in circular manner.
  3. Place the prepared stuffed makki ki roti on hot griddle. Cook the roti on medium flame. Apply little oil on both sides of the roti to make it crisper. Cook till both sides of the roti turns brown.
  4. Once ready, serve hot with butter or sarson ka saag.

Ingredients:
Fresh Bread crumbs of 4 slices
Sugar- 1 cup
Desiccated coconut – 1 cup
Grated Carrot – 1 cup
Cashew nuts – a few
Milk – 1 cup
Desi ghee – 2 tsp

Method:
1.       Grind all bread slices in a mixer jar or chopper. In bread crumb, add carrots and milk. Soak the mixture for 15 min.
2.       Melt sugar in a kadai, add coconut and cook till it turns little brown. Add soaked bread carrot mixture. Keep moving the mixture with help of spatula to prevent sticking on the sides of the pan. Cook the mixture on medium flame till it completely dried up.
3.       Add desi ghee to give nice flavour and glazing. Cook for another 10- 15 min till the mixture leaves the sides of the pan.
4.       Take a greased flat plate spread the complete mixture while it is hot. Grease little desi ghee on top to give a nice sheen. Put cut marks as per desired shape of barfi. Stick cashew nuts on each pcs. Allow the barfi to come down to room temperature.
5.       Place the barfi plate in refrigerator for setting for about 20 min.
6.       Once set, cut barfi pcs and store in air tight container.

Ingredients:
Semolina - 1 cup
Curd – 1 cup
Chopped spring onion - ¾ cup
Chopped Broccoli – ½ cup
Salt – as per taste
Eno – 1 packet
Black sesame seeds – 1 tsp

Method:
1.       Mix semolina and curd in a bowl and keep aside for 15 min for fermentation. Once ready, add salt, eno and mix it well. The consistency of the batter should just like idli batter. Add little water, if required.
2.       In another bowl, add salt and mix both vegetables.
3.       Grease small cups with oil and place vegetable mixture in each cup. Top it with semolina mixture and sprinkle few sesame seeds on top.
4.       Place these muffin cups in preheated air fryer. Air fry at 180 degrees for 6 min. Once cooked, allow the muffins to cool down.
5.       Remove the muffins from the cups and savoury muffins are ready to serve.

Ingredients:
Soya chunks – 1 bowl (soaked and boiled)
Capsicum – 1 pcs
Besan/ Gram Flour – 2 tsp
Chopped spring onions – 1 cup
Chopped ginger garlic – 1 tsp
Salt, black pepper powder – as per taste
Chilly sauce. Soya sauce, tomato ketchup – 1 tbsp
Corn flour – 2 tsp

Method:
1.       In boiled soya chunks, add gram flour and 2 tsp oil and mix well to coat the soya chunks. Airfry these chunks at 180 degrees for 8 min.
2.       For the gravy, heat 1 tsp oil in a pan. Sauté ginger garlic, spring onions, sliced capsicum. Add mixture of corn flour and water and cook it for 15 min.  Add salt, black pepper powder, chilly sauce and soya sauce. Cook for 5-10 min more at medium flame, till the gravy thickens.
3.       Add the air fried soya chunks in the prepared gravy. Add water to the gravy if it is very thick. Add tomato ketchup for taste. This is optional. Cook for 5 min.
4.       Once ready, garnish with spring onion flower and serve hot.


 Gajar ka halwa or carrot halwa is very famous Indian dessert recipe which is usually prepared in winter months.  It is a traditional slow cooked recipe with just carrots, milk, ghee, sugar and a few dry fruits. Gajar ka halwa is made with varied ingredients like with or without milk, with milkmaid, with khoya etc. It depends on the taste and flavour of each ingredient that enhances the richness of gajar ka halwa.

Ingredients:
Grated Carrots – 2 kgs
Desi ghee – 2 tsp
Milk – 1 glass
Sugar – 2 cup
Cream/ Malai – 1 cup
Nuts – 2-3 tsp (Cashewnuts/ almonds/ raisins)

Method:
  1. In a kadai or non-stick pan, cook complete quantity of carrot with milk on medium flame. It will take around an hour for carrots to get soft. Keep on stirring in between.
  2. Once carrots get soft and tender, add sugar. Sugar will leave water. Cook the halwa till water evaporates. Continue cooking on medium flame.
  3. After halwa dries up, add cream and cook for another 15-20 minutes. At this stage ensure to stir the halwa continuously as there is tendency to get stick at edges.
  4. As a last step, add desi ghee for glazing and cook for 10 minutes till the halwa leaves oil in the pan.
  5. Garnish the halwa with chopped or sliced dry fruits and serve hot.

Ingredients:
Guava – 1 pcs (Should be little raw)
Fresh Coriander – 1 cup
Mustard seeds – 1 tsp
Green chilli – 1 pcs
Lemon juice – 1 tsp
Salt – ½ tsp

Method:

  1. Wash the coriander well. Cut guava into small pcs. Remove hard seeds from guava, if any.
  2. For a thick consistency, take a chopper and add all ingredients except mustard seeds. Chop it to get a nice green chutney. For fine chutney, use a blender jar.
  3. For tempering, heat little oil in a pan and splutter mustard seeds in it.
  4.  Once chutney is ready, add lemon juice and mustard seeds tempering. Guava chutney is ready to serve.
