Ingredients:
Semolina Idli/ Rice Idli – 10-15 idlis (small size)
Ginger Garlic – Few cloves/ pcs
Hung Curd – ½ cup
Cashew nuts – 5-6 pcs
Fresh Coriander – ½ cup
Salt, Red chilli powder – ½ tsp (As per taste)

Method:
1.       In a grinder jar, add ginger, garlic, cashew nuts, fresh coriander. Grind to form a smooth paste.
2.       Add this paste to hung curd, 1 tsp oil and mix well to form a nice marinade. Add prepared idlis and coat all idlis well with the marinade. Keep this in bowl in refrigerator for 10-15 min.
3.       Once idlis are marinated well, put the idis on skewers for grilling.
4.       Put the idli skewers in preheated airfryer for grilling at 180 degrees for 10 min.
5.       Once grilled, serve Idli tikka with cut capsicum and tomato.

Ingredients:
Tomatoes – 2.5 Kgs (roughly cut into small pcs)
Onions – 2 kgs (roughly cut into small pcs)
Ginger, Garlic – 100 gms each
Refined oil – 0.5 kgs
Salt, Red chili powder, Turmeric powder - 2 tsp each

Method:
1.       In a chopper, chop ginger and garlic separately.
2.       In a chopper itself, chop tomatoes and onions together. The consistency of the mixture should neither be too fine, nor be too course.
3.       In a big Kadai or pan, heat oil, sauté ginger garlic till light brown.
4.       Add tomato onions chopped mixture and keep the mixture on high flame for 10-15 min, then reduce the flame. Cook the mixture on medium flame for 1-1.5 hrs till the water completely evaporates and the masala/ curry leaves oil.
5. Add salt, turmeric powder and red chili powder in between.
6.       The quantity of the masala will reduce considerably, once cooked properly.
7.       Once ready, cook for another 10 -15 min to ensure that the water has completely evaporated for proper preservation.
8.       Allow the masala to cool down. Store the masala in steel/plastic containers/ice cubes trays depending upon the convenience.
9.       Store the masala in freezer chamber of refrigerator, as it will freeze.
10.       For usage, take out the masala from freezer to melt it down and the gravy masala is ready to use for any gravy vegetables.

Ingredients:
Refined Flour/ Maida – 250 gms
Refined oil – 1 tbsp
For Stuffing:
Chopped and Fried Dry fruits – 100gms
Sugar – 100gms (Quantity can vary as per taste)

Method:
1.       Prepare firm dough of flour and oil. Make small balls of dough and roll it like a small roti/flat bread.
2.       Apply little water on edges. Place little stuffing at centre. Fold it to form a semi circle. Seal the edges by pressing the edges. Using a fork, press the edges to give a nice impression on edges of gujiya. Prepare all other gujiyas in similar manner.
3.       Preheat the airfryer at 18 degrees. Place all gujiyas in airfryer basket and air fry it at 180 degrees for 10 min. Once brown, remove the gujiyas from airfryer.
4.       Cool down gujiyas and dip it in sugar syrup for 1 min. This step is completely optional.
5.       Healthy airfried gujiyas as ready to serve.

Ingredients:
Potato – 4-5 pcs
Salt (or Rock salt/Sendha Namak) – ½ tsp
Vinegar – 1 tsp
Oil – 1 tsp

Method:
1.       Wash all potatoes very nicely to remove all dirt as we will keep the peels of potato and will not remove it.
2.       Using a potato slicer, make nice even slices of potato. Soak all potato slices in a bowl of water mixed with vinegar. Soak potato slices in water for 15-20 min to remove starch.
3.       Then drain out the water from the chips and wash in fresh water.
4.       In another pan, take fresh water, mix little salt as desired. Add potato slices in this water and boil it on medium flame for 2-3 min to remove any further starch. Do not over boil the potatoes.
5.       Once boiled, wash the potatoes in cold water in a mesh and allow the water to drain away completely.
6.       Spread the potato slices on cotton or muslin cloth and allow it to dry for at atleast 20- 25 min.
7.       Preheat airfryer at 180 degrees. Meanwhile in a bowl, take all potato slices and coat with little oil using hands.
8.       Transfer the potato slices in airfryer basket and cover with the lid or foil paper.
9.       Keep the potato slices in airfryer at 200 degrees for 25 min.  Keep moving the potato basket in between to prevent sticking to each other.
10.   Once done, cool the potato chips and store in airtight container. Sprinkle little salt, if required.
