Ingredients:
Baby corns (Boiled for 5 min) - 250 gms
Ginger garlic paste/ Chopped - 2 tsp
Besan (Gram Flour) - 1 cup
Salt, Red chilli powder - As per taste
Ajwain (Carom Seeds) - 1/2 tsp
Cooking Soda - a pinch

Method:
1. Prepare a batter of batter of gram flour and water. Add ginger garlic paste along with all spices, cooking soda. Add  1 tsp oil for greasing. Mix well,
2. Add baby corns in the prepared batter. Coat each baby corn nicely.
3. Preheat Airfryer at 180 degrees. Place a foil paper in the basket. Place all baby corns coated with batter and air fry at 180 degrees for 10 min.
4. Once ready, allow the fritters to cool down slightly. Remove from foil paper and serve hot with ketchup.

Ingredients:
Ajwain / Carom Seeds - 25 gms
Honey - 1 tsp
Water - 250 ml

Method:
1. Soak Ajwain/carom seeds in water overnight.
2. Next day in the morning, sieve this water and add honey to it.
3. Drink this water everyday empty stomach for atleast 3 months for a consistent weight loss.
4. Soaked ajwain can be reused for 1 more day and after that it needs to be discarded.

A simple and quick snack recipe. Only need rice flour and good sunlight to make these papads.

Ingredients:
Rice Flour (Chawal Ka Atta) - 1 cup
Carom seeds (Ajwain) , Salt - As per taste

Method:

1. In a bowl, prepare a batter of rice flour and water. For 1 cup of rice flour, add 2-3 cups of water. The batter should be very thin and without any lumps.
2. Add ajwain and salt as per taste.
3. Keep a pan of boiling water and cover with a greased plate. Pour the bater on the hot plate and allow it to cook for for 5 min, while it is covered.
4. Once cooked, remove the papad from the plate with help of a knife. Keep the prepared papads on flat surface to cool down.
5. Keep these papad in direct sunlight till all are completely dried.
6. Once dried, deep fry the papads and enjoy this crispy snack with a cup of tea

Ginger - 1 inch pcslt
Honey/Sugar - 1 tsp
Rock Salt - 1/4 tsp

1. In a mixer jar, add mint, ginger and littler water. Grind to make a paste.

Ingredients:
Milk- 1 litre
Khoya Barfi – 250 gms
Sugar – 150 gms
Kesar – few
Nuts – as desired

Method:

  1. Simmer milk in heavy bottomed kadai. Keep on stirring the milk and cook till it thickens and quantity is reduced to half.
  2. Once quantity is reduced, add mashed khoya barfi . Cook for 5 min.
  3. Mix kesar in hot milk and add into mixture.
  4. Add sugar as per taste and cook for 5-10 min.
  5. Allow the mixture to cool down completely. Blend it using blender and churn to form a thick icecream.
  6. Keep the mixture in freezer till semi solid. Churn the mixture again. Repeat this procedure 2-3 times to avoid forming ice in the kulfi.
  7. Set the kulfi mixture in kulfi mould. Add few rose petals in the moulds.
  8. Keep it in freezer for 7-8 hours till Kulfi is completely set. For serving, de-mould the kulfi and garnish with sliced or chopped nuts.

Ingredients:
Curd – 1 bowl
Tomato – 2
Sugar – 1 tsp
Dried curry leaves – ½ tsp
Fresh Coriander leaves – a few
Mustard seed (Rai) – ½ tsp
Salt, Rock salt – As per taste

Method:
  1. In a Kadai, heat little oil and splutter mustard seeds. Cut each tomato into 2 pcs. Add cut tomatoes into Kadai and cook for 5 min till soft.
  2. Beat curd. Sugar, rock salt and salt together. Keep aside.
  3. Cool down the tomatoes. Once cooled, remove the skin of the tomatoes and mash it.
  4. Add mashed tomato puree in curd and mix properly.
  5. Garnish will fresh coriander leaves. Serve chilled.

Ingredients:
Ripe Mangoes – 2 pcs
Raw Mango – 1 pcs
Sugar – 1 cup

Method:
1.       Cut both type of mangoes into small pcs and put it into pressure cooker for steaming. Add 1 cup of water for steaming.
2.       Simultaneously in a pan, pour 1 cup water and sugar. Heat this sugar syrup till sugar completely dissolves in water.  
3.       Once steamed, cool down the mangoes. After cooling, blend to form a mango puree using a hand blender.
4.    Mango Puree can be sieved to remove the mango fibers. This step is optional. 
5.       Add the sugar syrup in to the puree. This is the mango concentrate.
6.       For serving, add cold water into this concentrate and serve chilled with ice cubes.


 
Masala Urad Dal Vadi or|Amritsari Wadiyan is an authentic Punjabi dish. Use this vadi with any curry recipe especially with Potato and enjoy!!!

Ingredients:
Urad Dal – ½ Kg
Fresh chopped coriander – 1 cup
Ginger – small pcs
Salt – as per taste (should be towards higher side)
Black pepper power- 1 tsp
Aesfoetida powder/ hing powder- ½ tsp
Red chilli flakes – 1- 2 tsp
Cumin seeds/Zeera – 2 tsp
Clove, Cinnamon stick, black Cardamom – 50 gms in total
Grated bottle gourd / Lauki – 1 kg

Method:
1.       Soak the Urad dal for 2-3 hrs. Before soaking, wash the urad dal 2-3 times. After soaking, grind the dal to form a coarse paste. Beat the material till it becomes light and fluffy.
2.       To test the material, dip a small drop of paste in water. If the paste floats, then material is ready and no more beating is required.
3.       Remove excess water from grated bottle gourd and add it the dal paste.
4.       Make a fine powder of cumin seeds, Clove, Cinnamon stick, black Cardamom and add this powder in the paste.
5.       Mix the mixture nicely with black pepper powder, fresh coriander, grated ginger and hing powder. Add salt as the last step.  
6.       Place a plastic sheet on a flat surface and put small portion of vadi material on sheet. Place the complete material on sheet at regular intervals.
7.       Put this sheet in direct sunlight. Cover with net cloth to avoid dust and dirt. Keep these vadis in sunlight till these are dried completely.
8.       Ensure the vadis are completely dried so that no portion is wet, as it might get fungus.
9.       Once dried, store masala vadis in air tight container.

Brown bread pcs – 3 (cut into small squares)
Sprouts – 1 cup
Mustard seeds/ Rai – 1 tsp
Curry leaves – a few
Chopped beans, cabbage, capsicum, onions , tomatoes – 2 cups
Lemon juice – 1 tsp
Salt, Red chilli powder, turmeric powder – As per taste

Method:
  1. Heat oil in a kadai, splutter mustard seeds and curry leaves. Sauté onions till little brown. Add all other vegetables and seasoning's.
  2. Add sprouts and bread pcs and cook for few minutes. Add little water for moisture.
  3. Cook for 5 minutes.
  4. Squeeze lemon juice and garnish with chopped tomatoes.
