Ingredients:
Semolina - 1.5 cup
Curd - 1 cup
Chopped vegetables (Carrots, Capsicum, onions) - 2 cups
Ginger garlic chopped or in paste form - 1/2 tsp
Roasted Vermicelli - 1 tbsp
Salt - As per taste
Eno packet - 1

Method:
1. Soak semolina in curd for 15-20 min. Add all vegetables, ginger garlic,  vermicelli and salt. Mix well Add water to adjust the consistency.
2. In the last add 1 sachet of eno for instant fermentation.
3. Grease idli moulds with little oil and prepare the idlis in steamer or microwave.
4. Vegetable idlis are ready. Serve coconut chutney and enjoy a healthy breakfast.

Mango kulfi is the most relished and delicious sweet dish during summer season. Homemade kulfi is free from preservatives, no colouring agents and is creamy,

Ingredients:
Milk – 1/5 litres
Sugar – 2 tablespoon
Mango Puree of 3 pcs

Method:
1.       In a Kadai, thicken the milk, Boil it till the milk reduces to half. Add sugar and simmer for 10 more minutes. 
2.       Allow the milk to cool down completely.
3.       Mix the mango puree into milk and blend the same to get a smooth mango puree. Keep this mixture in freezer. Allow the mixture to set slightly and blend again. Follow this process for at-least 2-3 times. This will help avoid crystals and will get a creamy kulfi.
4.       Pour the mixture into kulfi mould and keep in freezer till the kulfi set properly.
5.       A stick for kulfi can be added at this stage (optional).
6.       Serve cold either by cutting into pcs or in a stick form.

Ingredients:
Cinnamon powder - 1/2 tsp
Honey - 1 tsp
Hot water - 1 glass/ 250 ml

Method:
1. Boil water and keep it aside.
2. In a glass add cinnamon powder and pout little quantity of water. Mix nicely and pour the complete quantity of water and further mix well.
3. Allow this mixture to cool down completely, till it reached the room temperature.
4. Once completely cooled, mix honey to the mixture. Weight loss drink is ready.
5. Consume half quantity of this drink before going to bed at night and keep the rest in refrigerator. Balance half needs to be consumed early morning, first thing. After 1.5 hrs have breakfast..

Ingredients:
Chana Dal / Split Bengal Gram - 1/2 cup
Rajma/ Kidney Beans  - 1/4 cup
Kala Chana/ Brown Chick Peas- 1/4 cup
Chole/ White Chick Peas - 1/4 cup
Matar/ White Peas - 1/4 cup
Urad Dal / Black Gram - 1/4 cup
Lobia / Cowpea - 1/4 cup
Masoor dal/ Red Lentils - 1/4 cup
Green gram dal - 1/4 cup
Ginger Garlic paste - 1 tsp
Tomato Puree- 2-3 tbsp
Salt, Red chili powder, Turmeric powder - As per taste
Cumin seeds - 1/2 tsp
Coal pcs - a small


Method:
1. Soak all the pulses mixed together for 4-5 hrs.
2. In a pressure cooker, heat 1 tsp desi ghee or oil and splutter cumin seeds. Saute ginger garlic paste.
3. Add tomato puree and cook it till it leaves oil. Add all pulses along with spices. Add desiered water. 
4. Pressure cook for 15-20 min.
5. Simultaneously prepare the tempering by heating desi ghee and put coloured red chili powder. Add this in the prepared dal.
6. As a final touch, burn coal pcs in flame, till it turns red. Put this red hot coal pcs in dal and top with desi ghee. Cover the container with plate so that the flavours of coal gets infused in dal. 
7. After 2 min remove the coal pcs from dal and serve hot.

Asfoetida/ Hing - 1/4 Tsp
Cumin seeds/ Zeera - 2 tbsp
Black Pepper powder/ Kali Mirch - 1/2 tsp

Black Salt - 1 tsp

Raw Mango - 3 pcs cut into small pcs
Mustard seeds - 1/2 tsp
Jaggery/Gud - 1/2 cup
Turmeric powder, Red chili powder, Salt - As per taste 
Fennel Seeds/ Sauf - 1/2 tsp
Aesfotida/ Hing - A pinch
Methi dana - 1/4 tsp
Mustard oil - 1 tbsp

Method:
1. Heat oil in a kadai and splutter mustard seeds methi dana. Add aesfoetida, cut mango pcs, fennel seeds, all spices.
2. Add 2 cups of water and cover the kadai and cook for 15-20 min till mangoes become soft and tender. 
3. The add jaggery and cook for another 15 min till the gravy becomes thick. 
4. Consistency of the gravy can be adjusted as per taste.
4. Digestive aam ki launji is ready.

Sugar - 1 cup
Water - 1/2 cup
Lemon Juice- 1 tsp
Honey- 1 tsp
Ginger Powder - 1/2 tsp
Cloves Powder - 1/4 tsp
Powdered Sugar - 2 tsp

Method:

1. In a pan, add water, sugar and boil till sugar dissolves. Also add ginger, cloves powder and honey. Simmer for 5-20 min on medium flame till it becomes thick dark syrup. 

2. Let it cool for few min and add lemon juice in the end. Mix well. 

3. Spread a butter paper on tray and put small portions of syrup with help of spoon. It should be done quickly else syrup will get very very thick. 

4. Cool down these sweets for 15-20 min. Remove the sweets from butter paper and spread powdered sugar to avoid stickiness of the sweets. 

5. Store the prepared cough sweets in an air tight container and have it whenever suffering from cough, cold and flu.

Lemon - 1 tsp
Ginger pcs - 1 inch pcs cut into pcs
Salt - a pinch
Sugar - 1/2  tsp
Tea leaves/ Tea bag/ chai patti - 1/2 tsp

Rock Salt (Kala Namak) - a pinch

Method:
1. In a pan, heat 1 cup of water. Add all ingredients except lemon, honey and chai patti. Bring the mixture to boil.
2. Let the mixture boil for 2-3 min on medium flame, till all the flavours gets into the water. Once ready, add chai patti and immediately switch off the the flame to avoid boiling of tea.
3. Simultaneously, in a serving cup, add honey and lemon juice. Sieve the prepared water mixture into the cup and mix it well. 
4. Drink this lemon honey ginger flavoured tea empty stomach to help relive sore throat and common cold.
