Ingredients:
Dates/ Khajoor - 1 cup 
Green cardamom, black cardamom, Cinnamon stick Powder - 1/2 tsp
Milk - 1 glass

Method:
1. Seedless dates are preferred in this recipe, however if you have dates with seeds, then remove the seeds from dates by slicing it.
2. If the quality of dates is hard, then soak it in 1/4 cup milk for half hour to soften it. Else good quality dates are very soft, which can be used directly.
3. Heat 1/2 glass of milk in a pan along with dates for 10-15 min till it becomes soft. 
4. Cool down the date milk mixture and blend smooth in the mixer jar. 
5. Heat the remaining quantity of milk in the same pan. Add the power and blended dates mixture and simmer for 5 minutes on medium flame. 
6. Hot nutritious khajoor milk is ready to serve.

Caramel pop corns is latest trend these days. But I wish to make something more healthy to avoid corn syrup. So here is my version of caramel popcorns, these are simple jaggery flavoured popcorns. These flavoured popcorns goes best for parties, birthday and picnics. Kids will enjoy and relish the flavoured popcorns and you can boost about a new recipe :)

Ingredients:
Popcorn kernels - 150 gms
Jaggery - 150 gms (quantity can be reduced as per liking)
Chopped Cashewnuts - 2 tsps
Sesame seeds - 1 tsp
Cardamom powder - 1/4 tsp
Red chili powder - 1/4 tsp (optional)

Method:
1. Heat 1 tsp oil in a kadai and add popcorn kernels. Cover the kadai with a lid and keep it on medium flame. Let the popcorns pop up nicely. Popcorns will be ready in few minutes.
2. Once the popcorns are ready remove from the kadai.
3. In the same kadai, melt jaggery, keep on moving the jaggery to avoid burning. Add spices in melted jaggery. Mix well till there are no lumps in jaggery.
4. Remove the kadai from flame and add cashewnuts, sesame seeds and popcorns. Mix together with light hand to avoid crushing of the popcorns, till popcorns are coated well. While mixture is still hot, separate the popcorns which stick to each other. 
5. Jaggery flavoured popcorns are ready to serve.






Learn how to make tomato sauce at home with this very simple method. Homemade tomato ketchup is always healthier as it is free of all artificial flavours and colours.

Ingredients:
Tomatoes - 1 kg ripe tomatoes
Chopped onions - 100 gms
Garlic cloves - 8-10 pcs
Spices ( Cloves, black cardamon, Cinnamon stick) - 3 pcs
Black  pepper - 8-10 pcs
Red Chili powder - 1/2 tsp
Cumin seeds - 1 tsp
Salt - 1-2 tsp
Sugar - 2 tsp
Sodium Benzoate - 1/2 tsp (to be used in case of preservation)
Vinegar - 50 ml

Method:
1. Wash and chop tomatoes. In a pressure cooker, add tomatoes, onions, garlic and little water. Cook till tomatoes becomes soft and pulpy.
2. Sieve the tomato puree and cook again with all spices. Tie the spices in a muslin cloth and add in puree. Cook for 15-20 for all flavours to get induced in the puree. 
3. Once the puree gets thick, remove the bouquet garni and add rest of the ingredients. Cook till sauce like consistency is achieved. 
4. Once tomato ketchup is ready, switch off the flame and add sodium benzoate mixed in little puree. This is a preservative, which can be avoided as well. 
5. Sterilize the glass jars in which tomato ketchup needs to be stored.
6. Serve this homemade tomato ketchup with fries, sandwiches etc. 




Amla chutney is a nutritious, healthy, simple and a quick recipe. It is best to have this chutney in winters as Gooseberry is available in plenty in India and it provides immunity to our body, being rich source of vitamin C. Spread this chutney on bread slice or roti and Enjoy!!

Ingredients:
Amla/ Gooseberry - 250 gms
Jaggery - 200 gms
Cardamom powder - 1/4 tsp
Red chili powder - 1/4 tsp
Salt - 1 tsp
Rock salt - 1 tsp
Black pepper - 1/2 tsp

Method:
1. Steam amla/gooseberry for 10-15 min and remove the seeds from center. Cut into small pcs
2. In a mixer jar, grind amla to make a paste.
3. Heat a kadai/non stick pan, add amla paste along with all the ingredients.
4. Cook the paste on medium flame and keep on moving the chutney to avoid sticking at the base or sides of the pan.
5. After 10-15 min, chutney will be ready.

Note - Instead of jaggery sugar can also be added.


Ginger pickle is simplest pickle recipe which is oil free. It requires minimal ingredients and is a 2-min pickle recipe. This pickle goes perfect with any Indian breakfast or even served with any main course. Simple pickle with huge appeal!!!

Ingredients:
Leftover rotis/ Fresh Rotis - 2
Gram Flour (Besan) -  2tbsp
Chopped onions - 1/2 cup
Salt, Carom seeds, Red chili powder - As per taste
Fresh Coriander - 1/2 cup
Mustard oil - 1 tsp

Method:
1. Prepare a batter of gram flour and water. The batter should be little thick and not too thin. Add all the ingredients.
2. Spread this batter evenly on 1 side of roti.
3. Heat a non-stick pan and grease with little oil. Place the roti and cook on medium flame till crisp. Cook the other side of roti as well.

Long Rice/ Basmati Rice - 2 Cup 
Vegetables (Onions, Cauliflower, Carrots, Potatoes, Peas, Green Chili) - 1/2 cup each
Fresh coriander - 1 cup
Chopped ginger garlic - 1 tsp
Spices (Cloves, Green cardamon, Black cardamom, Bay leaf, Black Pepper, Chakli) - 1-2 pcs each
Cumin seeds - 1/2 tsp
Curd - 1 cup
Milk - 1/2 cup
Roasted cashew nuts - For Garnishing
Salt, Red chili powder, Turmeric powder - As per taste

Method:
1. Dry roast all the spices, cool down and grind to form a powder. Bay leaft and chakli may not be added in the powder.
2. Heat 1 tbsp of mustard oil in a kadai, saute potatoes and remove from kadai. Saute all the vegetables together. 
3. In a rice cooker, add rice, sauteed vegetables, spices powder, chakli, bay leaf along with all other ingredients. 
4. Put the rice cooker and cook mode and once the mode changes to warm then hot steaming biryani is ready.
5. Garnish with fresh coriander and cashewnuts. Serve curd, papad along with biryani to have a wholesome meal.

Maggi Atta Noodles - 3 packets

1. Heat mustard oil in kadai or non stick pan. Saute potato and remove from pan. Saute all the vegetables for 1-2 min to maintain the crispness.
2. Add Maggi , break into 2 parts to get long strands. Add Maggi masala and boiling water.
