Learn how to cook crispy masala baingan in few minutes. Baingan masala recipe or Indian baingan masala is simple to cook and delicious to eat. Masala Brinjal can be served with roti, parantha or even butter naan. It can also be eaten as a snack.

Long Baingan (Brinjals) - 1/2 kgs
Gram Flour (Besan) - 1 cup
Mustard seeds (Rai) - 1 tsp
Urad Dal - 1 tbsp
Salt, Red chili powder, Turmeric powder - As per taste
Cumin seds -1 tsp
Coriander powder - 1 tsp
Dry Mango powder - 1 tsp

1. Wash and cut the brinjals into circles. 
2. Mix all the masala together in a bowl and coat this masala with baingan. 
3. Heat 2 tbsp mustard oil in a non-stick pan with. Splutter mustard seeds and cumin seeds. Add masala coated baingan in to the pan and cook on medium flame till it becomes crisp. Stir occasionally in between.  
4. Once brinjal slices becomes crisp, switch off the flame and serve hot with roti or bread.
