Ingredients:
Custard powder - 1.5 tbsp
Sugar - 1/2 cup
Cream / Malai - 2 tbsp
Milk - 2 cups

Method:
1. Boil milk in a pan and switch off the flame once boiled.
2. Prepare custard powder paste by adding cold milk in powder. Add the paste in boiled milk. Mix it well and put back on flame. Stir the mixture to avoid any lump formation.
3. Cook the custard powder mixture till it becomes thick. Switch off the flame once thick and add sugar. Mix the sugar in mixture and allow the mixture to cool down completely. Once cooled, add cream, mix it nicely. Transfer the contents into mixer jar and churn the mixture until smooth.
4. Pour the custard powder mixture into a freezer safe bowl. Cover with lid and freeze for 1-2 hours till semi- solid. Then churn the mixture again. Follow this step for 2-3 times to avoid any ice crystals formation and for ice cream to become smooth and creamy.
5. Set the custard ice cream in freezer for 8-10 hours till frozen. Once ready serve and garnish with tutti fruity or rose petals.

Ingredients:
Tamarind / Imli - 200 gms
Jaggery / Gud - 300 gms 
Salt, Red chili powder - As per taste
Black pepper, Cardamon powder, Dry ginger powder - 1/4 tsp each
Cumin seeds power - 1/2 tsp
Rock salt - 1/2 tsp
Raisins - 2 tsp
Melon seeds - 2 tsp

Method:
1. Soak the tamarind in water for 1 hour till it becomes soft. Then sieve out the tamarind pulp to get maximum pulp. Add water as required. 
2. Take the tamarind pulp in a pan. Add jaggery and melt it on medium flame. After 10 min, the mixture will start to get thick. Cook for another 10- 15 min. 
3. Once the tamarind chutney becomes little think, add all the spices mentioned above along with melon seeds and raisins. Mix it well.
4. Cook till the desired consistency is achieved. Cool the chutney completely and store in airtight container. 

Serve this sounth chutney or tamarind chutney with all the Indian snacks.

Gram Flour (Besan) - 3/4 Cup
Whole wheat Flour (Atta) - 1/4 cup
Baking powder - 1/4 tsp
Green Cardamom - 2 pcs
Sugar - 1/2 cup
Solid Ghee/ Butter - 1/3 cup
Pinch of salt
Almonds for garnishing

Method:
1. Firstly powder sugar along with cardamon in a mixer jar. Mix this mixture with ghee until creamy.
2. Sieve flours, salt, baking powder together.
3. Mix together both to form a dough. Make small balls of the mixture and garnish with few sliced almonds on top of each nan khatai.
4. Bake the nan khatai in preheat airfryer at 160 degrees for 8 min. Cool down completely and store in airtight container.

Loose Tea (Chai patti)/ Tea bags - 1.5 tsp or 2 teabags
Sugar - 3 tsp
Fresh mint leaves
Lemon
Water - 2 cups

Method:
1. First prepare tea water. Boil water with tea and sugar. Cool down the tea water.
2. Add few mint leaves and steep for 5 min. Cool down the tea syrup to room temperature and squeeze lemon juice into it.
3. In a blender jar, add loads of ice, add sieved tea syrup, few min leaves. Crush the mixture to get  frozen iced tea.
4. Serve immediately. Garnish with a mint leaf and lemon slice. Enjoy this summer cool drink.

Puffed Rice (Murmura) - 200 gms
Peanuts - 1 cup
Cornflakes - 1 cup
Curry leaves - A few
Salt, Turmeric powder - As per taste

Method:
1. Heat 2 tsp refined oil in a kadai, roast peanuts till brown and remove from kadai. 
2. In remaining oil, saute mustard seeds, curry leaves. Switch off the flame and add turmeric powder along with puffed rice. Mix well. Switch on the flame and roast the mixture. Add roasted peanuts, cornflakes along with all spices. Roast for 5 min.

Ingredients:
Boiled Baby Potatoes - 1/2 kgs
Homemade cream (Malai) - 1/2 cup
Ginger - 1/2 inch pcs
Garlic cloves - few pcs
Cumin seeds / Zeera - 2 tsp
Coriander seeds - 2 tsp
Salt, Red chili powder - As per taste
Dried red chili - 1 pcs
Dried Fenugreek Leaves Powder/ Kasturi Methi - 1/2 tsp

Method:
1. Heat a non-stick pan and dry roast cumin seeds, coriander seed, dried red chili, garlic, ginger for 2-3 min on medium flame. 
2. Remove from heat and cool down and grind these in mixer grinder to form a paste. 
3. Add this masala paste in the boiled potatoes. Add rest of the ingredients except cream and mix everything well so that all the masala coat the potatoes nicely. 
4. Transfer the masala potatoes in a baking dish and place it in preheated airfryer. Air fry at 180 degrees for 3 min for the first time. After 3 min, add cream and mix it well. Again put back in airfryer and bake at 180 degrees for 15 mins. 
5. Once the potatoes are crisp and gets nice golden crust, then serve immediately.  







Mango are everywhere in summers. We have tried out another healthy sweet mango recipe using whole Mango flour. These are Eggless mango muffins which are healthy muffin recipe, needs few simple ingredient to bake it. These are whole wheat muffin recipe which are flavoured with mango. An airfryer muffins are crisp from outside and soft from inside.

Ingredients:
Whole Wheat Flour (Atta) - 1 cup (125 gms)
Mango Puree- 1 cup
Castor Sugar - 1 cup
Curd - 1/2 cup
Oil - 1/4 cup
Baking powder - 1/2 tsp
Baking Soda - 1 1/2 tsp
Salt - a pinch
Almonds - a few

Method:
1. Sieve all dry ingredients (Flour, baking powder, baking soda, salt).
2. In another bowl mix oil, curd, sugar and mango puree. Mix well so that sugar gets completely dissolved in the mixture. 
3. Combine dry ingredients into wet ingredients to form a smooth batter.
4. Grease muffin moulds with little oil and pour the batter into the moulds. Sprinkle sliced almonds on top of all muffins.
5. Place muffin moulds into preheated airfryer at 180 degrees for 8 min. Once ready check with tooth prick  stick. If it comes out clean, then muffins are ready to serve. 
6. Cool down the muffins. These muffins will be soft from inside and crisp from outside. Enjoy!!!

Kasturi Methi - 1 tsp

Dry Mango Powder (Amchur Powder) - 1/2 tsp
Coriander Powder (Dhaniya Powder) - 2 tbsp 
Mustard Oil - 2 tbsp

Method:
1. Peel arbi and wash it nicely to remove dust. Cut the arbi just like french fries or long slices. 
2. Heat mustard oil in a non- stick pan. Splutter mustard seeds. Add all the ingredients together and mix well. Cook the arbi vegetable on medium flame till done. Stir occasionally. 
3. Serve hot masala arbi with bread or even butter naan. You will truly enjoy it.
