Ingredients:
Samak Atta / Moraiyo/ Varai Flour - 200 gms
Sago/ Sabudana - 2 tbsp
Curd - 1/2 cup
Sentha Namak/ Salt - 1 tsp
Chopped Beetroot - 1 tsp (optional)
Eno / Fruit Salt - 1 tsp

Method:
1. In a mixer grinder jar, coarsely grind sago seeds.
2. In a bowl, mix all the ingredients except beetroot and eno. Prepare a semi thick batter like idli batter. Allow the batter to rest for 10 -15 min.
3. Then add beetroot along with eno. Mix nicely and pour ladderful on batter in greased idli moulds.
4. Steam idli for 10 on high flame and 5 min on low flame.
5. Soft idli are ready to serve with coconut chutney.

Milk - 2 cups
Dark chocolate compound - 50 gms
Castor sugar - 1 tsp (optional)
Cream - 1 tsp (optional)
Whipped cream for garnishing

1. Melt dark chocolate in a double boiler. 
2. Heat milk, whisk it till boils. Add melted cream, sugar and cream. Whisk for 2 min and pour it in cups.

Ingredients:
Buckwheat flour/ Kuttu Atta - 200 gms
Radish (Grated) - 1 cup
Radish leaves (Chopped) - 1 cup
Salt (Sentha Namak) - As per taste
Green Chili - 1
Cooking Soda - A pinch

Method:
1. Add all ingredients except radish in a bowl and prepare a thin batter using water. Allow the batter to rest for 10-15 min for fermentation.
2. Then add grated radish and chopped radish leaves. Mix well.
3. Pour 2 ladder full of batter on heated and greased tawa/girdle. Do not flatten the batter too much.
Cook the pancakes on medium flame as kuttu atta takes more time to cook.
4. Cook till both sides becomes crisp. Serve hot with potato vegetable or pumpkin vegetable.

Ingredients:
Semolina/Suji/ Rava - 1 cup
Gram flour/ Besan - 2 tbsp
Dried coconut - 1/4 cup (cut into small pcs)
Coriander leaves
Onions slices - 1 cup
Tomato puree- 150 gms
Ginger Garlic chopped - 1/2 tsp
Cooking soda - 1/2 tsp
 Salt, Red chili powder - As per taste
Garam Masala - 1/2 tsp
Coriander powder - 1 tsp
Cumin seeds/ Zeera - 1 tsp
Processed cheese cube - For garnishing

Method:
1. Heat a non stick kadai. dry roast coconut till little crisp on medium flame. Remove coconut pcs from kadai. In same kadai, heat 1 tsp oil and saute onions, ginger and garlic. Cook till brown. Cool it down.
2. In a mixer grinder, grind coconut, onion mixture, coriander to a coarse paste.
3. Rava pakoras - In  a bowl, prepare a thick batter of rava, besan,  salt, cooking soda using water. Add 1/5 tsp of coconut coriander paste. Transfer the batter  in a grease mold and steam it for 10 min. Rava pakora material is ready. Cool it down and cut into small square pcs.
4. Gravy - In a kadai, heat 1 tsp oil and splutter zeera, and add the coriander paste, salt, red chili powder, garam masala, coriander powder. Mix well and add tomato puree. Cook on medium flame for 10 min till oil separates from masala.
5. Add 1 glass of heated water in the masala to prepare the gravy. Boil it and cook it for 10 min and then add rava pcs into it. Add more water if required.
6. Serve rava sabzi and shred cheese on top for garnishing.

Curd - 250 gms

Method:
1. Prepare a batter of besan, curd and all spices like salt, red chili powder , cumin seeds and cooking soda. The consistency of the batter should neither be too thick nor too thin. This is the pakora batter ready.

5. For tempering, heat 1 tsp desi ghee and splutter cumin seeds. Cool for 1-2 min and add coloured red chili powder.
6. Serving - Squeeze all besan pakoras or besan vadas and put it in serving plate. Top with spiced and flavored curd along with desi ghee tempering.
7. Garnish with little red chili powder. Instant dahi bhalla is ready to serve.

Boiled Potatoes -2
Cottage Cheese/ Paneer - 50 gms
Gram Flour / Besan - 1 cup 
Semolina - 1 tbsp
Chopped Ginger Garlic - 1 tsp

Coriander power, Garam Masala - 1/2 tsp each

Method:
1. Batter - In a bowl, take gram flour, suji and add water to get a thin batter. Add all spices, ginger garlic along with cooking soda. Allow the batter to rest for 15-20 min. 
2. Cut 1/2 cm thick slices of boiled potato. 
3. Mash paneer and add salt and red chili powder. 
4. Put 1 tsp mashed paneer stuffing on 1 potato slice and cover with another slice. Prepare all other slices like this. 
5. Heat tawa/ gridle and grease with oil. Dip the potato cheese slices in the batter and place on heated tawa. Flame should be low. Put little oil around all pakoras. Allow it cook till crisp and brown. Flip the pakora to cook both the sides. It will take approx 10 min.
6. Serve hot tawa aloo paneer pakoras with sauce or coriander chutney.
