Ingredients:
Maggi Noodles - 1 pack
Gram Flour/ Besan - 2 tbsp
Chopped onions, carrots, capsicum, cabbage - 1/2 cup each
Salt, Red chili powder - As per taste

Method:
1. Prepare Maggi with little extra water. Transfer in a bowl and add all vegetables. Cover the bowl, and keep aside for 10 min so that vegetables cook a little bit.
2. Add gram flour, salt, red chili powder and mix well.
3. While vegetable Maggi is still hot, put ladder full on a heated griddle/ Tawa. Spead the material gently and cook on medium flame till both sides are crisp.
4. Serve immediately.

Lotus Stem/ Kamal Kakdi - 250 gms
Gram Flour - 2 tbsp
Semolina - 2 tbsps
Cottage Cheese / Paneer - 150 gms
Onions, Finely Chopped - 1 cup
Tomato Puree - 1 cup
Curd - 1-2 tsp
Ginger Garlic, chopped - 1 tsp
Cumin seeds- 1 tsp
Salt, Red chili powder, Garam Masala - As per taste

Method:
1. Peel lotus stem pcs and wash nicely to remove all dirt. Cut it in small pcs. Chop kamal kakdi in chopped or mixer grinder.
2. Kofta - In chopped kamal kakdi, add mashed paneer, semolina, besan along with all spices. Mix nicely. Add 1-2 tsp oil in kofta material. Prepare kofta in any desired shape. Glaze all kofta with little oil. Place all kofta in preheated airfryer. Air fry kofta for 10-12 min at 180 degrees.
3. Gravy - Heat 2 tsp oil in a kadhai, splutter cumin seeds, add ginger garlic, onions and saute for 4-5 min on medium flame. Add tomato puree and cook the masala for few min and add all spices. Add curd.Mix well. 
4. Cook the masala for 10 min till oil separates from it. Add water to prepare curry. 
5. Once masala is cooked, add garam masala. Add kofta in gravy and cook for few minutes.

Ingredients:
Peanuts- 1/2 cup
Chana Dal - 2 tsp
Garlic cloves - 3-4 pcs
Curry Leaves - Few twigs
Red chili dry/fresh - 3 pcs
Green chili - 2 pcs

Cumin seeds -1/2 tsp
Salt - As per taste

Method:
1. Dry roast peanuts on medium flame till crisp.

4. Tempering - Heat 1/2 tsp mustard oil and saute mustard seeds along with red chili and few curry leaves.

Soyabean Nuggets - 1 cup
Onions, chopped - 1 cup
Tomato Puree - 1 cup
Curd - 2 tbsp

Coriander seeds (Dhaniya) - 1 tsp

Method:
1. Soak soyabean nuggets in water for half hour. Once the nuggets puff up, squeeze extra water and keep aside.
2. Dry roast all spices cumin seeds, coriander seeds, Clove, Green cardamom, Black cardamom, Bay leaf, Cinnamon stick, phool for 2-3 min. Cool down and grind to form a powder.
3. Heat 2 tbsps mustard oil in a pressure cooker, saute soya nuggets for 5 min. Remove from flame and keep aside.
4. In same cooker, heat 1 tsp mustard oil and roast ginger garlic , onions and tomatoes to form a masala. Add salt, red chili powder and turmeric powder.
5. Also add curd and keep on stirring till the masala starts to boil. Cook the masala till oil separates from it.
6. Once the masala dries up, add soyabean nuggets and mix well. Add little water and pressure cook till 1-2 whistles.
7. Remove the lid of the cooker and cook soyabean masala for few minutes. Lastly add the freshly prepared masala and mix well.
8. Soyabean chunks masala is ready to serve.
