Kashmiri Tea Leaves - 2 tsps
Sugar - 3 tsp
Green Cardamom - 2-3 pcs
Cinnamon stick - 1 small stick
Crushed Almonds - 2 tsps
Dried Rose petals - a few
Saffron - a few (optional)

Method:
1. Boil 2 cups of water. Add crushed green cardamon along with cinnamon. Simmer for 2-3 min till the aromas infuses in water.
2. Add sugar along with few rose petals and boil till sugar dissolves.
3. Add crushed tea leaves in water and boil for 1-2 min.
4. Add crushed almonds in cups and top with hot Kashmiri tea. Garnish with few rose petals. Serve immediately.

Ingredients:
Milk - 2 cups
Dark Chocolate, chopped - 100 gms
Sugar - 3/4 cup
Cocoa Powder - 2 tbsp
Corn starch - 2 tbsp
Rice Flour - 1 tbsp

Ingredients:
Refined Flour (Maida) - 1 cup/ 200 gms
Sugar - 1/2 cup/ 100 gms
Butter - 2 tbsps
Salt - a pinch
Vanilla Essence - 1 tsp

Method:
1. In a bowl, mix sugar and melted butter. Add refined flour, salt and vanilla essence. Mix well to make a crumbly mixture.
2. Add very little water and make a thick non-sticky dough. Let it rest for 15-20 minutes.Keep it covered. If in case, you have added more water,add little more refined flour and correct the dough)
3. Take small balls and make spiral shapes using a comb or fork as shown in the video. Spread a thin layer on the comb or the back of fork. Roll it to make a spiral shape. Press it gently so that it doe not open up while frying or air frying.
4. Place all Kulkuls in preheated air fryer and air fry for 5 min first. After 5 min, shake kulkuls and again fry for 2 min, in total 7 min in airfryer.  
5. Cool down completely and store in airtight container.

Ingredients:
Kachalu - 1 kg
Tamarind puree - 250 gms
Roasted Carom seeds - 1 tbsp
Pomegranate seeds - 1 cup
Fresh coriander leaves - A few twigs
Lemon - 1 pcs
Green chili - 2-3 pcs
Salt, Red chili powder, Rock salt - As per taste

Method:
1. Boil kachalu in enough water. Add little salt while boiling. once boiled remove the peel and cut into small pcs.
2. In a mixer grinder jar, prepare a puree of 1 tsp tamarind puree, coriander leaves and green chilies.
3. Mix all the ingredients very well and give a nice toss to the chaat. Add little colored red chili powder in tamarind puree for the colour.
4. Garnish with pomegranate seeds and fresh coriander leaves. Serve immediately.

Note: In case coloured red chili powder is not available, then add edible food colour in tamarind puree to add colour in chaat.

Ingredients:

Whole Wheat Flour (Atta) – 2 cups / 250 gms
Jaggery/ shakar – 1.5 cup / 250 gms
Refined oil – 3/4 cup / 180 ml
Curd – 3/4 cup / 180 ml
Baking powder – ½ tsp
Baking soda – 1.5 tsp
Cinnamon powder – 1/2 tsp
Ginger powder - 1/2 tsp (optional)
Vanilla Essence - 1 tsp
Fruits & Nuts:
Nuts (walnuts, almonds etc) – 1/2 cup
Dried Fruits, chopped (Raisins, black berries , apricots, figs, dates, cashews) - 1 cup
Fruit Juice (Mixed Fruit/ Grape/ Orange/ Apple) - 1/2 cup

Method:
1. Soak all dried fruits in fruit juice for 2 hours.
2. Sieve all dry ingredients in a bowl - Whole wheat flour, baking soda and powder, cinnamon powder, ginger powder.
3. Add soaked dried fruits along with half quantity of almonds and walnuts.
3. In separate bowl, add oil, curd, vanilla essence. Melt jaggery in microwave for one min with interval of 30 sec and add into the mixture to form a smooth puree.
3. Add both dry and wet ingredients to form a thick batter. Add little milk, if batter gets too thick.
4. Grease a 6 x 6 inch baking dish and pour the cake batter in it. Sprinkle some crushed nuts on top of the batter.
5. Air bake the cake in preheated airfryer at 160 degrees for 25 min. Once baked check with tooth pick. If it comes out clean, remove the cake from the airfryer and place on wire rack to cool down. If the toothpick is little sticky, then continue baking for another 2-3 min.
6. Once cool, cut into desired pcs and serve.

Tip - One can serve this fruit cake slice with a dollop of  vanilla ice- cream.

4. Shallow fry all paneer pcs on heated and greased tawa. Cook on medium flame from all sides till crisp and golden brown.
5. Serve immediately with tomato ketchup or green chutney.
