Kachi Haldi/ Fresh Turmeric - 100 gms
Methi Dana, coarsely grounded - 1 1/2 tsp
Fennel seeds, coarsely grounded - 1 1/2 tsp
Mustard Seeds Powder - 1 1/2 tsp
Asfoetida - 2 pinches
Salt, red chili powder - As per taste
Mustard oil - 1 tbsp (Heated and cooled)
Vinegar - 1/2 cup

1. Peel and cut kachi haldi in to thin slices. Add all the ingredients together and mix well.
2. Transfer the achar in a glass jar and keep in direct sunlight for 2 days.
3. Store the achar in refrigerator for as long as 1 month.
