Ingredients:
Semolina - 1.5 cups
Oil - 1/3 cup
Curd - 1/2 cup
Milk - 3/4 cup
Sugar - 3/4 cup
Baking powder - 1/2 tsp
Baking Soda - 1/3 tsp
Salt - 1/4 tsp
Vanilla essence - 1 tsp
Edible food colours (Green, Orange ) - a pinch (optional)

Method:
1. In a bowl add all ingredients except baking soda, baking powder and food colours.
2. Mix everything to prepare the batter. Rest for 15-20 min.
3. Preheat pressure cooker with salt. Remove the rubber and gasket of the pressure cooker lid and cover it. Heat on medium flame for 10-15 min.
4. Add baking powder along with baking soda. Mix well. Divide the batter in 3 equal portions. Mix both edible colour with cold milk. Add this colour in 2 batter portions. 
5. Grease muffin cups and layer the 3 coloured batter in it. Green colour batter at base, then white and then orange batter. Add blueberries in between for added colour and flavour. This is optional step.
6. Tap all the muffin cups and place in preheated cooker. Bake at lowest flame for 20-25min. Once muffins are ready, check with toothpick/knife. Remove muffins from pressure cooker and cool down completely.

Ingredients:
Semolina - 1 cup
Corn Kernals - 3/4 cup
Onions, Carrots, Beans (chopped) - 3/4 cup
Lemon - 1 pcs
Green chili - 2 pcs
Curry leaves - a  few
Chana dal, Urad dal - 1 tsp each
Mustard seeds - 1 tsp
Salt - As per taste

Method:
1. Dry roast semolina on a medimum flame till colour changes to little brown and give out nice smell. Once done, remove from kadai.
2. Heat 1 tsp oil and splutter mustard seeds along with both pulses. Saute for 1 min and add curry leaves, green chili, onions along with all vegetables. Cook for 1 min on medium flame.
3. Add 3 cups of water along with lemon juice and salt. Boil this mixture. Once boiled, add corn kernels and cook for 1 min.
4. Gradually add roasted semolina and continuously stir it to avoid lump formation. Continue to stir till water dries up.
5. Serve immediately.

Pumpkin/ Kaddu/ Petha - 250 gms (cut into pcs)
Jaggery - 1/4 cup
Tamarind puree - 1/3 cup
Fenugreek seeds - 1/2 tsp

Ingredients  (for 5 kgs /1 kg quantity):

Whole Wheat Flour - 1.5 kg / 250 gms
Clarified Butter / Desi Ghee - 1.5 kg / 250 gms
Powdered Sugar - 1.25 kg / 200 gms
Edible gum (Gond) - 100-200 gms / 20- 50 gms (Variable)
Nuts, Raisins, Dried fruits (Makhana/ Almonds/ Grated coconut)- 1 kgs / 200 gms (Variable)

Method:
1. In a heavy bottom kadai, heat desi ghee and roast makhana for few minutes till crisp. Remove from kadai.
2. Heat 1-2 tbsp ghee, add gond and fry till it puffs up and becomes crisp. Remove from kadai.
3. Heat balance quantity of ghee in kadai, add whole wheat flour in batches and cook the mixture on high flame till flour becomes brown. Stir the mixture continuously for even browning. It will take 20-25 min depending upon the quantity.
4. Meanwhile, crush fried makhana and gond with crusher or back side of spatula.
4. Once brown, add coarsely grounded almonds in the cooked atta ghee mixture. Switch off the flame. Add crushed makhana, gond, grounded coconut. Allow the mixture to cool down a bit.
5. Add powdered sugar in the mixture and mix well.
6. Prepare gond ke laddu/ladoo and cool it down completely.

Jaggery - 1 cup
Peanut - 1 cup
Fennel Seeds - 1/2 tsp (optional)
Desi Ghee - 1 tbsp

Method:
1. Dry roast peanuts in a kadai for 5-7 min on medium flame till crisp. Cool it down. Remove the peel by rubbing the peanuts and separate the peels. Rub the peanuts to break in 2 pcs.
2. Melt jaggery in kadai on medium flame. Stir it continuously to avoid burning or overcooking. Cook jaggery till it breaks like a toffee when dropped in cold water. If jaggery stretches when put in water, then cook for few more seconds. Switch of the flame once cooked and add peanuts, fennel seeds and desi ghee. Mix well.
3. Spread the mixture on a greased plate and flatten it up. Sprinkle coconut on top for garnishing. Put marks on chikki material. Cool it down completely.
4. Break chikki pcs and store in air tight container.

Fresh coriander, chopped - 1/2 cup
Salt - 1 tsp

Method:
