Ingredients:
Oats - 1 cup
Semolina - 1/2 cup
Curd - 1/2 cup
Chopped Vegetables (Carrot, beans, capsicums, onions) - 1 cup
Fresh chopped coriander leaves - 2 tsps
Salt, Red chilly powder - As per taste
Mustard oil - 1 tsp

Method:
1. Coarsely grind oats in mixer grinder to form oats flour. 
2. Prepare a batter of grounded oats, semolina, curd and water to make dosa like batter. Rest for 15-20 min.
3. Add all vegetables and spices in batter and mix well. If the batter becomes too thick, add little more water. 
4. Heat non-stick pan or tawa and grease with few drops of oil. Pour ladder full of batter and spread with back of ladder to form mini pancakes. Cook the pancakes on medium flame till crisp from both the sides. 
5. Serve oats pancakes with coconut chutney, coriander chutney or even ketchup.

Ingredients:
Chocolate Compound - 100 gms 

Method:
1.  Melt chocolate compoound using double boiler method or microwave with a interval of 20 sec till chocolate melts completely. 
2. Cool down melted chocolate a bit till the texture gets little thick.
3. The chocolate should be warm but not hot. Spoon the chocolate in piping bag or plastic bag. Snip through the tip.
4. Pipe small chocolate blobs on a butter paper/ parchment paper or even foil paper. Once done completely, place it in freezer till the chocolate harden completely. 
5. Once set all the chocolate chips will very easily remove from the butter paper. Store these in an air tight container in refrigerator. Use these homemade choco chips to prepare your cookies, cakes and more :)


Kaanji is a healthy drink made using black carrot (also called kaali gaajar). Kanji is an Indian probiotic drink which is very good for health, it helps in digestion. Black Carrots - 0.5 kg
Mustard seeds Powder (Rai powder) - 2-3 tbsps
Salt - 1-2 tbsp
Red chilli powder - 1/2 tbsp
Filtered Water - 5 liters

Method:
1. Wash the carrots well. Peel the skin and cut into long pcs.
2. Crush the mustard seeds in mixer grinder or use ready made powder.
3. Combine all the ingredients in a glass jar/ mason jar. Half fill the jar with water and mix well. Cover it with lid or muslin cloth.
4. Keep the jar in direct sunlight for 3-4 days. Stir it with a wooden spoon in between.
5. Once the kanji develops a tangy flavor, that means the drink is fermented. Strain the drink, save the pickles to enjoy later.

Amla/ Gooseberry - 250 gms
Jaggery powder - 150 gms
Rock Salt (Kala Namak)- 1 tsp
Black Pepper powder - 1/2 tsp
Asfoetida (Hing) - 1/4 tsp
Roasted Cumin seeds powder - 1/2 tsp
Carom Seeds (Ajwain) - 1/2 tsp
Salt - 1 tsp

Method:

Whole Wheat Flour (atta) - 250 gms
Poppy Seeds (Khus Khus) 2 tbsps
Fresh Coriander leaves - 1/4 cup chopped

4. Cook the paratha on heated girdle or tawa using minimal oil till crisp from both the sides.

33.    Serve freshly prepared spinach pasta. Garnish with little cheese on top.

Milk Powder - 2.5 tbsps
Cocoa Powder - 1.5 tbsps
Powdered Sugar/ Icing Sugar - 3 tbsps
Butter - 2.5 tbsps
Vanilla Essence - 1/2 tsp
Chopped Nuts - 2 tbsp (optional)

Method:
1. Boil water in kadai and place a glass bowl in the center. Melt butter in bowl and switch off the flame. Keep the bowl in the hot water throughout the process.
2. Add powdered sugar in melted butter and mix well.
3. Mix cocoa and milk powder together and add in sugar butter mixture. Mix well all the ingredients till the cocoa absorbs butter and becomes a thick mass. 
4. Add vanilla essence and mix well. Chocolate mixture is ready. Remove the bowl from the kadai.
5. Immediately add the chocolate mixture in plastic/silicon molds. Press it gently in each mould. for setting, place the filled molds a refrigerator for 1 hour or in fridge for 1/2 hour. 
6. Un-mold the chocolates and enjoy these cocoa powder chocolates. These chocolates are quite fuggy.

Note - to prepare smooth silky chocolate, mix 3 tbsps milk powder with 1 tbsp cocoa powder. Also use cocoa butter rather than plain butter.

Ingredients:
Seedless dates - 500-600 gms
Chopped Almonds, cashew nuts, pistachios - 1 cup
Melon seeds - 1 tsp (optional)
Poppy seeds (Khus Khus) - 3-4 tbsps
Desi ghee - 2 tbsp

Method:
1. Roughly grind dates in mixture grinder jar. pulse for 3-4 times if dates are soft, if dates are hard, pulse for 5-6 pulses.
2. in a non-stick pan, dry roast poppy seeds for 2-3 min on medium to high flame to remove the rawness of seeds. Remove it from the pan.
3. Heat 1 tbsp desi ghee and roast chopped nuts along with melon seeds for 3-4 min till crisp. Remove from kadai/ pan.
4. Heast balance quantity of desi ghee and cook grounded dates mixture. Cook for 3-4 min till soft on medium to high flame. Add in roasted crisp nuts and mix well till it become whole mass and mixed nicely.
5. Remove the mixture from kadai and allow it to cool down a bit. After 5 min, roll out the date and nuts mixture to form a cylindrical roll. Alternatively date ladoos can be prepared. Coat the roll/ ladoos in poppy seeds. Cover the roll with aluminium foil and keep in fridge for 1 hour .
6. Once set cut pcs of date and nuts roll and store in air tight container.

Mustard oil - 3/4 cup
Green chili - a few

Method:
1. Boil, peel and cut kachalu into small pcs.
2. Heat oil in non-stick pan and splutter mustard seeds along with fenugreek seeds. Switch off the flame and cool it down a bit.
3. Add all spices along with kachalu pcs, green chili. Now switch on the flame and cook for 2-3 min.
4. Switch of the flame and cool it down. Add lemon juice and mix well. Transfer the achar in glass jar and keep in sunlight for 1-2 days.
5. Store at room temperature.
