Kaanji is a healthy drink made using black carrot (also called kaali gaajar). Kanji is an Indian probiotic drink which is very good for health, it helps in digestion. It can be made very easily prepared by natural fermentation of black carrots. Usually kanji is made during #holi festival in India or in winter months.

Ingredients:
Black Carrots - 0.5 kg
Mustard seeds Powder (Rai powder) - 2-3 tbsps
Salt - 1-2 tbsp
Red chilli powder - 1/2 tbsp
Filtered Water - 5 liters

Method:
1. Wash the carrots well. Peel the skin and cut into long pcs.
2. Crush the mustard seeds in mixer grinder or use ready made powder.
3. Combine all the ingredients in a glass jar/ mason jar. Half fill the jar with water and mix well. Cover it with lid or muslin cloth.
4. Keep the jar in direct sunlight for 3-4 days. Stir it with a wooden spoon in between.
5. Once the kanji develops a tangy flavor, that means the drink is fermented. Strain the drink, save the pickles to enjoy later.
