Ingredients:

For batter:
Brown Bread Slices - 4 pcs
Curd - 1 cup
Semolina (Suji) - 1/2 cup
Salt - 1 tsp (as per taste)
Eno/ Fruit Salt - 1 sachet/ 1 tsp

For Frying/tempering:
Mustard Seeds (Rai) - 1 tsp
Chopped Onions, capsicum - 1/2 cup each
Few Curry leaves
Tomato Sauce/ Tomato puree - 2 tsps

Method:
1. Grind bread slices in a mixer grinder jar and coarsely grind it. 
2. In grounded bread, add in semolina, curd, salt to prepare idli batter. The consistency of the batter should have medium consistency neither too thick nor too soft. Lastly add eno and mix immediately. 
3. Add the batter in greased mini idli moulds and steam the idlis for 5 min on high flame and 5 min on low flame in steamer.
4. Cool down the idli and remove from steamer. 
5. Frying the idli - Heat 1-2 tsp of mustard in a pan. Splutter mustard seeds, saute onions, capsicum for few minutes on medium flame. Add in curry leaves along with mini bread idli and sauce. Toss everything well and serve fried mini bread idlis immediately.

Ingredients:
Mango cubes -1/2 cup
Lemon - 1 pcs
Sugar - 2-3 tsps
Fresh Mint leaves
Crushed Ice
Carbonated Water/ Soda Bottle
Rock Salt - optional

Method:
1. Puree mango cubes and keep aside
2. In a serving glass, add mint leaves, lemon pcs along with sugar. Use a muddler to crush the sugar, mint and lemon together, till all the juices of lemon and mint are extracted very well and sugar dissolves.
3. Add mango puree in glass, top it with crushed ice. Give a light stir. Finally add soda and give a gentle stir.
4. Garnish with fresh mint leaves or a slice of lemon.

Ingredients:
Green Chilli- 250 gms
Muatard Oil - 3-4 tbsps
Chrushed Ginger Garlic - 25 gms each
Salt - 1/4 cup
Coloured Red chili powder - 1 tsp
Turmeric Powder (Haldi) - 1 tsp
Powdered Cumin seeds (Zeera - 1 tsp
Crushed Methi Dana - 1 tsp
Powdered Mustard Seeds (Rai) - 1 tbsp
Tamarind Pulp - 1/2 cup
Jaggery/ Jaggery powder - 1/2 cup
Vinegar - 1/2 cup

Method:
1. Wash and pat dry green chili. Put slit and stuff salt in it. Cut chili into small pcs.
2. In a pan, heat 3-4 tbsp in a pan. Add chopped ginger and garlic. Saute on medium to high flame for 1-2 min.
3. Add all spics/masalas on low flame. Cook for few min,
4. Add green chili into cooked masala. Add salt and cook on low flame for 1-2 min till chili becomes soft.
5. Add tamarind pulp and cook on slow flame for 2-3 min.
6. Add jaggery for sweetness in the mixture and cook till jaggery melts.
7. Once jaggery melts, switch of the flame and cool down the pickle.
8. Add vinegar for preserving the pickle and store in glass jar.

Ingredients:
Gram Flour (Besan) - 2 cups
Salt - 1 tsp
Red chili powder - 1/2 tsp
Turmeric Powder (Haldi) - 1/2 tsp
Carom Seeds (Ajwain) - 1/4 tsp
Cooking Soda - 1/4 tsp
Oil - 2 tbsp

Method:
1.Mix the besan, soda, ajwain, haldi, red chili powder,1 tbsp oil and salt together.
2.Add water and knead into a soft dough. Continue kneading the dough for 5-6 min. Cover the dough with wet cloth and allow it to rest for half hour.
3.Take a portion of the dough and place it on a greased surface.
4.With base of your palm, drag the dough in a straight line, holding the dough at the starting point with the other hand.This will form a strip.
5. Remove these strips with help of palette knife. Brush little oil on the strips.
6. Air fry these strips in preheat air fryer at 180 degrees for 5 min till crisp.
7. Serve fafda with green chutney and tea.

Raw Mango (Kaccha Aaam) - 300 gms (3 pcs)
Asfoetida (hing) - 3/4 tsp
Salt - 1 tbsp
Red chili powder (coloured) - 1 tsp
Crushed Fenugreek seeds (Methi Dana) - 1 tsp
Crushed Fennel Seeds (Sauf) - 1 tbsp

Boiled White chana - 1 cup (200gms)
Gram Flour (Besan) - 2 tbsps
Rice Flour (chawal atta) - 2 tbsps

3.  These chana can be deep fried or air fry at 180 degrees for 10 min until crispy.
4. Once crisp, add in all vegetables along with spices. Mix well and serve immediately.

Powdered Sugar - 1/2 cup + 2 tbsp

Milk - 3/4 cup
Vanilla essence - 1 tsp
Desi ghee - 2 tbsps
Chopped Cashewnuts,walnuts, almonds, cranberries - 1 cup

Tutti Frooti (Dried Pumpkins) - 1 tsp (optional)

Method:
1. Grind brown bread slices in a mixer grinder jar to form bread crumbs.
2. Bottom layer - Use 1 cup of bread crumbs and add 1 tbsp desi ghee along with 1 tbsp powdered sugar. Mix well and transfer the material in a lined baking dish. Press the mixture at bottom with help of spatula. Keep the dish in freezer for 10 min for setting.
3. Cake batter - Take 1 cup of bread crumbs in a bowl, add refined flour, sugar, baking powder, baking soda. Mix well. Then add in vanilla essence, desi ghee and milk to prepare a batter. Use the required amount of milk. The batter should neither be too runny not too thick.
4. Take all nuts in another bowl, add in 1 tsp refined flour, 1/2 tsp desi ghee, 1 tsp sugar. Mix well. Keep aside.
5. Layering the cake - Remove the dish from the freezer, top with second layer of mixed dried fruits. Third layer would be that of cake batter. Pour the batter on nuts layer. Fourth layer would be of nuts again. Tap the dish nicely to level it up.
6. Bake the cake in preheated airfryer at 160 degrees for 15 min. Cool it down and cut into slices and store in airtight container.
7. Serve this soft and moist cake with tea.
