Ingredients:

1 Big Onion
Rice Flour - 2 cups
Salt - As per taste
Ginger Powder - 1/2 tsp
Red chili powder - 1/2 tsp
Oregano (Italian Seasoning) - 1 tsp
Black Pepper Powder - 1/4 tsp
Cooking Soda - 1/4 tsp
Oil - 2 tsps
Bread Crumb - 1 cup

Method:
1. Cut onions to form petals keeping the end intact. Open the onion petals as much as possible. This is our blooming onion.
2. Prepare batter of 1 cup rice flour, salt, ginger powder, red chili powder, black pepper, cooking soda, oil and water , as desired.
3. Keep 3 bowls ready - first dry rice flour, second rice flour batter, third bread crumbs.
4. Dip blooming onion in first dry rice flour and dust off extra flour. then dip in second batter bowl and coat it completely. Adding batter inside the crevices of onion petals. Invert the onion to drip off excess batter. Then finally transfer it to bread crumb mixture.
5. Preheat airfryer at 180 degrees for 5 min. Air fry coated blooming onion at 180 degrees for 5 min first , then at 200 degrees for 10 min till crisp.
6. Serve immediately with mayo and ketchup dip.

Ingredients:
1.5 cups of Watermelon
1 Cup Pomegranate Seeds
Few springs of mint
2-3 tbsps soaked Chia seeds

Method:
1. Juice waterlemon, pomegranate seeds and mint using a juicer.
2. Soak 2 tbsp pf chia seeds in 1 glass of water. Keep it soaked overnight in fridge. Add 2-3 tbsp of soaked chia seeds in juice. Mix well.
3. Consume immediately.

Ingredients:
Quinoa - 1 cup
Instant Oats/ Suji - 1/2 cup
Curd - 3/4 cup
Salt - 1 tsp (as per taste)
Chopped Vegetables (onions, tomatoes) - 1/2 cup
Chopped coriander - 1/2 cup
Grated Carrots - 1/2 cup

Method:
1. Take quinoa in a bowl and add water. Rub it with your hands properly and rinse the quinoa under running water at least 2-3 times. After the final rinse, soak quinoa in sufficient water for 30 min.
2. After soaking, drain out the excess water and store it. Do not discard the water.
3. In a mixer grinder jar, add little water (the same water used for soaking), add soaked quinoa, 1/2 cup soaked oats and little more water to prepare a uttapam batter.
4.  Transfer the batter another bowl, add curd and salt. Mix well and rezt the batter for 15-20 min.
5.  Heat a non stick pan, drizzle very little if required, put 2 ladder full of quinoa batter and gently spread it. Put vegetables on top. Cook it on medium flame for sometime. Flip over and cook for 2-3 min.
6. Serve immediately.

Ingredients:
Brown Bread Slices
Mustard oil - 2 tsp
Cumin seeds - 1/2 tsp
Chopped Onions - 1 cup
Chopped Carrot, cabbage, capsicum - 1 cup
Chopped Tomatoes - 1/2 cup
Salt, Red chili powder - 1 tsp (as per taste)
 Turmeric Powder - 1/2 tsp
Chaat Masala - 1 tsp

Method:
1. In a non stick pan, heat 2 tsps of mustard oil. Splutter cumin seeds in it. Add chopped onions and saute till golden brown.
2. Add in chopped green chillies, chopped carrots cabbage. and cook on medium flame till little soft.
3. Add in all the spices and continue to cook further. Ensure not to over cook as maintain the crispiness of the vegetables.
4. Add capsicum, tomatoes and cook for 1-2 min. Masala is ready. Keep it aside.
5. Toast brown bread slices on another pan or tawa. Grease it with butter and toast the bread slices on medium slow flame till these are absolutely crisp.
6. Apply butter on other side of bread and flip over so that both sides get crisp.
7. Put generous amount of prepared masala on crispy bread toast.
8. Consume immediately with a cup of tea of milk.

Dry Ingredients:
1 cup Oats Flour
2 tbsps Cocoa Powder
1/2 tsp Baking Powder
A pinch of salt

Wet Ingredients:
1/2 Banana
1/3 cup Curd

1. Combine dry ingredients in a bowl. Mix well

Ingredients:
Brown Bread Slices
Boiled and Cut Potatoes - 5-6 pcs
Peas - 1/2 cup
Chopped Ginger - 1/2 tsp
Salt - 1 tsp (as per taste)
Red Chili Powder - 1/2 tsp
Coriander Powder - 1 tsp
Chopped Fresh Coriander - 1/2 cup
Chaat Masala - 1/2 tsp
Mustard Oil - 2 tsps
Cumin Seeds (Zeera) - 1 tsp

Method:
1. Heat little oil in a pan or kadai. Splutter cumin seeds. Add few potatoes so that spices does not burn. Add red chilli powder. Add boiled and cut potatoes. Add peas chopped ginger. Saute for few minutes. Add all spices, coriander powder, salt and mix well. Cook till peas become tender.
2. Cool down the potato stuffing completely. Add in fresh coriander and chaat masala. Mix well and roughly crush the potatoes. Stuffing for the bread pakoras ready.
3. Dip bread slice in water and squeeze out excess water by applying pressure with palms. Place small quantity of potato peas stuffing and roll it to give a long cylindrical shape. No need to remove the edges of the bread slice.
4. Smooth out the surface of bread roll as if there is any crack, then bread roll might break while frying or baking.
5. Once all bread rolls are ready, place these in fridge or at room temperature for 10 min so that extra moisture dries up. This will help in ensuring that bread rolls do not absorb too much oil while frying and will become more crispy from outside.
6. Now bread rolls can either be deep fried or else can also be air fried in an airfryer.
7. Preheat airfryer at 180 degrees for 5 min. Place all bread rolls in air fryer basket and air fry at 180 degrees for 15 min till crisp and golden brown. This will make 5-6 bread rolls in one batch.
8. Once ready, serve hot bread rolls with tomato ketchup or coriander chutney.

Gram Flour (Besan) - 1 cup
Chopped Coriander - 1/2 cup
Chopped Green Chili - 2 pcs

2. Add all the ingredients to prepare oats pakora batter. The consistency of the batter should be just like general pakoras usually prepared. Add little water to adjust the consistency.
3. Heat an appam pan and dizzle little oil in all the sections. Put spoonful of oats pakora batter in each section and allow to cook from one end. Flip the appe pakoras to cook from other end.
4. Serve hot with chutney or tomato ketchup.
