Baked bread custard pudding can be made in airfryer, microwave, pressure cooker or oven.

Ingredients:
Brown Bread Slices - 3 pcs
Milk - 1.5 cups
Custard Powder - 1.5 tsp
Sugar - 1.5 tbsp
Butter - 1 tsp
Sliced Almonds for garnishing

Method:
1. Cut bread slices into small pcs. Do not remove the sides of the bread. 
2. In a pan add milk, sugar and custard powder. Whisk it and transfer on low to medium heat till it becomes thick. Add 1 tsp butter and cook for 1 -2 min till custard becomes creamy. Remove from flame and allow it to cool down a bit.
3. Pour the prepared custard on top of bread pcs. Mix well. Add nuts of choice.
4. Transfer the mixture in a greased and lined baking dish. 
5. Baking options : In airfryer at 180 degrees for 15-20 min, Oven at 180 degrees for 20-25 min, microwave for 4-5 min  on high power, cooker for 20-25 min on lowest flame. 
6. Once baked, cut into pcs and serve. Store in an airtight container, keep in refrigerator. Before serving warm for few seconds.

Ingredients:
Poha/ Flaked Rice - 3/4 cup
Bhuna Chana/ Roasted Chana/ Chana Dal - 1/4 cup
Jaggery/ Jaggery powder - 1/3 cup
Desi Ghee - 2 tbsp
Nuts (Almonds, Cashewnuts, Walnuts) - 2 tsp
Cardamom - 2 pods

Method:
1. Dry roast poha and chana for few min on lowest flame till crispy. Once roasted, cool down a bit.
2. Melt desi ghee and fry nuts. Remove the nuts from ghee.
3. In a mixer grinder jar, add roasted poha, roasted chana, jaggery, fried buts, cardamom and grind to form fine powder.
4. Add the powder in melted ghee and prepare ladoos.
5. Store at room temperature in an air tight box.

Potatoes - 3-4
Singhare Atta - 3-4 tbsp
Salt, Red Chilly powder - As per taste
Cumin seeds - 1 tsp
Chopped Ginger - 1/2 tsp
Oil/ ghee

Method:
1. Grate potatoes and soak in water for 5 min. Squeeze out excess water.
2. Add in all the ingredients to form pancakes material.
3. Heat a tawa/griddle and grease with oil/ghee. Spread the pancakes material and cook on medium to high flame for 5 min from both sides.
4. Serve hot with coriander chutney.

Ingredients:
Samak Rice - 50 gms
Milk - 3/4 liter
Sugar - 1/2 cup
Chopped Nuts (Almonds, cashew-nuts) Raisins
Few strands of Saffron
Rose Petals for garnishing

Method:
1. Soak samak rice in double the quantity of water for 2 hours. Grind it in mixer jar to form paste.
2. Heat milk in a heavy bottomed pan. Add the prepared rice paste and stir it continuously on lowest flame till it thickens up and cook well. It will take 5-10 min. Add more milk if required.
3. Once the milk mixture gets thick, add in sugar along with  nuts. Cook for few more minutes till sugar dissolves.
4. Cool phirni down and refrigerate it for 2 hours until chilled.
5. Serve the samak phirni chilled. Garnish with saffron strands, nuts and rose petals.

Boiled Potatoes - 4 pcs
Kuttu ka Atta/ Buckwheat Flour - 1/2 cup
Crushed peanuts - 2 tbsp
Desi Ghee - 1-2 tbsp
Sendha Namak - As per taste
Red chili powder - 1/2 tsp
Cumin seeds - 1 tsp
Chopped Ginger - 1/2 tsp
Lemon Juice - 1 tsp

Method:
1. Chop potatoes and roughly crush roasted peanuts.
2. Heat desi ghee in a pan and saute cumin seeds along with ginger. Add chopped potatoes, sprinkle salt, red chilly powder. Cook for few min on low to medium flame.
3. Cool down the mixture a bit and add crushed peanuts along with lemon juice. Transfer the potato mixture in a bowl.
4. Add kuttu ka atta, sprinkle little water and prepare small balls of this mixture.
5. Heat an appam pan and grease with oil. Place all aloo vada balls in each section and cook on lowest flame for few minutes. Drizzle little oil and flip over the balls till cooked properly.
6. Serve immediately with green chutney.

Ingredients:
Soya Chaap - 6 pcs
Curd - 1 cup
Cumin seeds Powder - 1/2 tsp
Black pepper powder - a pinch
Kala namak, Salt - As per taste
Kasuri Methi, Pudina Powder - 1/2 tsp
Chili flakes, Red chilli powder - As per taste
Onion and Ginger powder - 1/2 tsp (optional)
Coriander seeds powder - 1/2 tsp
Turmeric powder - 1/2 tsp
Food colour - a pinch
Malai - 2 tbsp
Butter - 2 tbsp
Lemon juice, chaat masala, onion rings for garnish

Method:
1. Marinade - Add in all ingredients in a bowl except butter. Mix well.
2. Steam soya chaap sticks or pcs and cut into small pcs. Add the soya pcs in marinade and coat well.
3. Keep aside the marinated chaap for 2-3 hours.
4. Put the marinated chaap in skewers and cook on tawa, non stick pan, grill or airfryer. In preheated airfryer, grill at 200 degrees for 5 min first. Apply butter and again grill for 5 min.
5. Transfer the soya chaap tikka in a plate. Sprinkle lemon juice, chaap masala. Serve with sliced onions and green chutney.
