Ingredients:
Boiled Potatoes - 3 big pcs
Desi Ghee - 2-3 tbsps
Granulated Sugar - 1/2 cup
Cardamom Powder - 1/4 tsp
Nuts of Choice (Alomonds, Raisins) - 1 tsp
Kesar or Yellow Food Colour - a pinch (optional)
Method:
1. Grate boiled potatoes with fine grater.
2. Heat desi ghee in a non stick kadai, add in grated potatoes and saute on low medium flame for few minutes till ghee separates from halwa. Let the halwa turn little brown.
3. Once the ghee separates then add sugar along with cardamom powder, dry fruits, food colour and mix well till sugar dissolves.
4. Aloo halwa is ready, garnish with chopped dry fruits and serve.

1. Dough Making - Prepare a semi soft dough using all the ingredients except desi ghee. Keep the dough for resting for half an hour.
2. Sata - Mix 1.5 tbsp flour with 1.5 tbsp desi ghee. Mix well to make a paste.
3. After half hour, divide the dough into 2 portions and roll out one portion of the dough into thin sheet. Spread generous amount of sata over it.
4. Roll it tightly and cut into 1/2 inch pcs. Press each pcs and roll it again. Prick with fork to prevent puffing up.
5. Apply sat and fold into semicircle. Apply sata again and fold into triangle. Gently press the sides of nimki. And prick again.
6. Once can deep fry nimki or Airfry at 180 degrees for 12-14 min until crisp. Keep it in standby mode for 10 min and allow it to cool down completely.

For Stuffing:
Dessicated Coconut/ Fresh Grated Coconut - 1 cup
Jaggery powder/ Jaggery - 1/2 cup
Green Cardamom Powder - 1/4 tsp
For Covering/ dough:
Whole Wheat Flour (Atta) - 1 cup
Semolina (Suji) - 1 tbsp
Clarified Butter (Desi ghee) - 1 tbsp
Milk - 3-4 tbsp
Oil for brushing
Method:
1. For stuffing - In a pan, take dessicated coconut, jaggery powder along with cardamom powde. Mix well and cook with continuous stirring. Cook for 2-3 min till jaggery melts. Do not overcook the mixture else it will become hard. Cool the stuffing.
2. For dough - Take atta, semolina and desi ghee in a bowl. Mix well using finger tips. Add in 3-4 tbsp milk in batches to prepare semi soft bu t smooth dough. Rest it for 10 min.
3. After 10 min, divide the dough into equal portion and roll into balls. Flatten out the balls with help of rolling pin till 3-4 " diameter circle. Place stuffing in centre and start pinching the edges using finger and thumb around the circumference. Ensure the pleats are formed till the end. Then bring all the pleats together in the center and pinch them together to seal it properly. Prepare all the modaks in similar manner.
4. Brush each modak with little oil.
5. Airfryer the modaks at 180 degrees for 10-12 min until golden brown from all sides and are crispy enough. Else one can deep fry/ shallow fry or bake the modaks in oven.
6. Store in air tight container.

3. Combine sugar, oil, milk and vanilla essence.
4. Mix dry ingredients with wet ingredients. Add in chopped apples and prepare batter.
5. If batter is too thick to work on, add little milk if desired.
6. Transfer the batter in a greased baking dish, level the top and bake in airfryer at 160 degrees for 18 min or in oven at 180 degrees for 30 min.
7. Once baked, while the cake is still hot, apple Apricot glaze. Microwave the apricot preserve or any jam flavour for 10 sec and apply it liberally on top. Keep it aside for cooling. This will give nice sheen and glaze to cake.
8. Once cooled, cut Barley cake into desired slices and serve.
Notes:
1. This cake can be prepared with only Barley flour without addition of wheat flour but it will be too fibrous, depending upon the amount of fiber in barley flour.
2. Addition of apple and cinnamon is optional. It gives lovely flavour to cake.
3. Apricot glaze is also optional step. Instead of apricot preserve, any jam or other flavour of preserve can be used.

Ingredients:
Full Cream Milk - 1 liter Milk Powder - 1/2 cup Brown Sugar - 1/4 cup+ 2 tsps Dried Fruits like Pistachio, Almonds etc - 1/2 cup each Cardamom Powder - 1/2 tsp (optional)
Method:
1. Take full cream milk in a heavy bottom sauce pan or kadai. Bring the milk to a boil on medium heat. Do stir frequently.
2. Once it come to a boil, make the heat to medium-low. Let it cook with continuous stirring scrapping of milk solids (malai) from top of milk and sides of the pan till it becomes 1/2 of original volume. It took me about 20 minutes.
3. Once half the volume, add milk powder paste (mix milk powder with cold milk), brown sugar and dry fruit powder.
4. Mix well and simmer till milk becomes thick and rabdi is formed. It took me 10 minutes.
5. Then turn off the stove heat. Let the rabdi mixture cool completely. It will get thicker as it cools.
6. Once it cools to room temperature, pour into kulfi moulds or popsicle molds. Alternately one can use small cups/ shot glasses/ kullad or even ice cube trays to set kulfi. Cover it with lid. Or cover with aluminum foil.
7. Let it set overnight in freezer or 7-8 hours until kulfi is firm, frozen and set.
8. Once set, remove the kulfi from the mould, dip it into water for 1-2 seconds only, it will come out very easily. Alternately, rub it between your palms. From the heat of the palm, side will get loose and will come out from the mould.
9. Garnish with some chopped nuts like pistachios or almonds.
Notes:
1. Instead of milk powder, khoya or cream can be used.
2. Do not use skimmed or low fat milk to prepare kulfi as it will not taste that good.

4. Cut small pcs of the dough and place in idli stand. Keep the stand in the preheated pressure cooker. Remove the rubber and gasket of the pressure cooker lid and cover it. The flame should be lowest possible and cook the biscuits for at least 30-35 min till golden brown and crisp.
5. Ensure to check the biscuits in between and cook further, if required. The bottom most biscuits will bake first so ensure to remove those biscuits first and then continue baking rest of the biscuits.
6. Cool down the biscuits completely and store in an air tight container.
Note:
1. Instead of ghee, softened butter can be used.
2. Cumin seeds be replaced with carom seeds (Ajwain) to make ajwain cookies.
3. Milk needs to be added carefully. Just add 2-3 tbsp mik till one is able to prepare dough.
