Ingredients:
Rice - 1 cup
Yellow Moong Dal - 1/2 cup
Salt - As per taste, Turmeric Powder - 1/2 tsp
Oil - 2 tsp
Desi ghee - 2 tbsp
Chopped Onion, tomatoes - 1 cup each
Chopped ginger, Garlic - 1/2 tsp each
Bay leaf (Tej patta) - 1 pcs
Kashmiri Red Chili Powder - 1 tsp
Black Pepper Powder - 1/2 tsp
Cumin Seeds - 1/2 tsp

Method:
1. Wash and soak rice and dal nicely and soak in 1 cup water for 15 min.
2. Transfer soaked rice and dal. Add salt, turmeric powder and little oil. Pressure cooker till 2-3 whistles. Both rice and dal should blend together.
3. Prepare masala in separate pan.  Heat ghee. Saute onions along with ginger garlic till little brown. Add chopped tomatoes, and saute for few minutes. Add all spices and cook the masala till oil separates from it.
4. Add dal khichdi in prepared masala and mix well.
5. Prepare second tadka of desi ghee, cumin seeds and red chili. Top this tadka on prepared masala khichdi and serve immediately.

Ingredients:
Carrot - 500 gms
Desi Ghee - 1.5 tbsp
Sugar - 3/4 cup or 150 gms
Khoya/ Mava - 150 gms
Cardmom Powder - 1/4 tsp
Chopped nuts and chandi Vrak for garnishing

Method:
1. Peel and wash the carrots. Chop carrots in chopper or mixer grinder.
2. Melt desi ghee in a kadai or heavy bottomed pan. Add chopped carrots in it and saute for 5-7 min till carrots cook well.
3. Add cardamom powder along with sugar and cook the mixture. Sugar will convert into syrup so the mixture will loose water. cook till moisture evaporates.
4. Then add khoya and cook the mixture collects together and one is able to move the complete mixture in one go.
5. One the carrot mixture dries up and is ready to set, transfer the mixture in a greased plate or tray.
Set the mixture properly and even out the surface with back side if spatula or small plate.
6. Leave the mixture at room temperature for 2-3 hours for setting.
7. Once set, cut carrot barfi in pieces.

Beetroot - 1 pcs
Whole wheat Flour - 1.5 cups
Salt, Carom seeds -1/2 tsp each
Chopped Garlic - 1/2 tsp
Sliced onions, carrots, capsicum - 1/2 cup each
Shredded Cabbage - 1/2 cup
Corns - 1/4 cup
Tomato Ketchup, chilly Sauce - As per Taste
Cottage Cheese (Paneer) - 1/2 cup

Method:
1. Grind beetroot in mixer grinder and knead a soft dough using the same.
2. Saute all vegetables in medium flame till cooked but crispy. Don't over cook the vegetables else it will turn soggy.
3. Roll out beetroot dough sheets on griddle. Spread tomato ketchup at base, place sauted vegetables in centre, top with chilly sauce and cottage cheese and roll out the Frankie. Cover with aluminium sheet or butter paper and serve coloured healthy delight to kids and family.

Ingredients:
Sesame Seeds (White Til) - 1 cup (100 gms)
Jaggery (Gud) - 100 gms
Khoya - 100 gms
Desi Ghee - 2 tsps
Chopped nuts for garnishing

Method:
1. Dry roast sesame seeds or til on low flame till the seeds puff up and turns little brown. Remove the roasted seeds in a plate.
2. Dry roast khoya or mava till soft, very little brown and the taste is not raw. Remove roasted khoya in another plate.
3. Melt desi ghee in same pan. Then melt jaggery, add 2-3 tsp water. Boil jaggery till it forms syrup. Cook till the syrup starts to bubble. Drop few drops of syrup in water, if it does not spread, that means jaggery syrup is ready. 
4. At this stage add in khoya , mix it well. Then add roasted sesame seeds and combine everything well till it becomes solid mass. Ensure to keep the flame on lowest side and cook till mixture becomes dense to set barfi. 
5. Set barfi in a greased plate and allow to set for 3-4 hours or until firm. Cut in to desired shape and store in airtight container.

Ingredients:
Baby Potatoes - 8-10 pcs
Melted butter - 2 tbsp
Oil- 2 tbsp
Chopped Garlic - 1/2 tsp
Lemon Juice - 1 tsp
Salt, Black Pepper - For taste
Chopped coriander for garnishing

Method:
1. Wash the potatoes and peel it. Cut slits in potatoes but do not cut through till end. Leave little space at bottom such that it is intact from bottom.
2. Mix all the ingredients in oil mixture. Place potatoes on parchment paper and brush the potatoes with oil mixture, also try to open the slits a bit.
3. Place the potatoes in preheated airfryer and bake at 180 degrees for 20 min till crisp and golden. In between also brush another layer of oil mixture. Else bake in oven at 200 degrees for 25-30 min.
4. Sprinkle chopped coriander and serve immediately.

Tip: Add flavoured seasonings to add to the taste.

Ingredients:
Rice (chawal) - 1 cup or 200 gms
Gur or Jaggery - 1 cup or 3/4 cup (Depending upon taste)
Desi Ghee - 2 tbsp
Almonds, Cashewnuts, Raisins - A few
Cardamom Powder - 1/2 tsp

Method:
1. Wash rice 2-3 times and soak it water for half hour. After half hour, discard the rice water. 
2. In a pressure cooker heat desi ghee and saute dry fruits, then rice. Add in jaggery and 2.5 cups water. Also add in raisins. Allow the water to boil till jaggery dissolves. Then pressure cook until 2 whistles.

Method:
1. In a bowl, take curd, milk, oil and powdered brown sugar. Mix together till sugar dissolves. Sieve dry ingredients in same bowl - whole wheat flour, baking powder, soda, salt, cinnamon powder.
2. Combine dry ingredients with wet ingredients to prepare a smooth batter.
3. Add in chopped nuts and grated carrot. Mix well.
5. Grease a baking dish, line with parchment paper. Pour the batter and tap it for few times to level it up.
6. Baking options:
- Airfryer at 160 degrees for 20 min
- Preheat cooker with 1 cup salt for 15-20 min on medium to high flame. Bake in cooker for 25-30 min
- Oven at 180 degrees for 30-35 min
7. Cool down the cake completely.
