Light and healthy Spinach soup is must for winter months. Spinach soup is very nutritious, quick and comforting soup recipe for all age groups. Palak soup is simple to make with not much ingredients required.

Ingredients:
Spinach Chopped - 1 Big Cup
Diced Potato, Tomato, Onion - 1 pcs each for vegetable stock
Butter - 1 tsp
Salt, Black Pepper - As per taste
Milk - 1/2 cup
Cream or cottage cheese for garnishing

Method:
1. Steam all vegetables potatoes, tomato, onion with 3 cups water in a pressure cooker until 2-3 whistles. All the vegetables will get tender. Once cooked, blend it and sieve it. This is vegetable stock ready.
2. In a kadai, melt butter, add in few chopped onions and saute for 1-2 min on medium flame. Add in chopped spinach and cook till spinach reduces in quantity,
3. Add in milk and cook it till it boils. Add salt along with black pepper as per taste. To this add the vegetable stock and cook for 5 min on medium flame.
4. Serve hot spinach soup with crushed cottage cheese or cream.
