Ingredients:
Whole Wheat Flour - 1 cup or 150 gms
Desi Ghee / Butter - 1/2 cup or 75 gms
Powdered Brown Sugar - 1/4 cup or 50 gms
Baking Powder - 1/2 tsp
Salt - 1/2 tsp
Cumin seeds (Zeera) - 1 tbsp
Milk - 2-3 tbsps (as required to prepare the dough)

Method:
1. Cream ghee and sugar till light and creamy. 
2. In a bowl mix atta, baking powder, salt and half quantity of cumin seeds. Add dry mixture in reamed mixture in batches. Prepare dough by mixing with finger tips. Add milk 1 tbsp at a time. Do not knead the mixture too much else dough will become hard. 
2. Roll the dough to give shape of log and refrigerate it for 15-20 min covered in a cling flim. 
3. Meanwhile preheat the pressure cooker with salt on medium flame. And also grease the idli moulds. 
4. Cut small pcs of the dough and place in idli stand. Keep the stand in the preheated pressure cooker. Remove the rubber and gasket of the pressure cooker lid and cover it. The flame should be lowest possible and cook the biscuits for at least 30-35 min till golden brown and crisp. 
5. Ensure to check the biscuits in between and cook further, if required. The bottom most biscuits will bake first so ensure to remove those biscuits first and then continue baking rest of the biscuits. 
6. Cool down the biscuits completely and store in an air tight container. 

Note:
1. Instead of ghee, softened butter can be used. 
2. Cumin seeds be replaced with carom seeds (Ajwain) to make ajwain cookies. 
3. Milk needs to be added carefully. Just add 2-3 tbsp mik till one is able to prepare dough.

Sharing another healthy whole wheat cake recipe with all of you - Eggless butterscotch cake with homemade butterscotch sauce/ caramel sauce and homemade praline. This butterscotch cake is a perfect blend of health (no maida, no refined sugar) with amazing taste of soft moist cake with creamy caramel sauce and crunchy praline on top.

Though butterscotch cake is made with whole wheat flour but there is no compromise on sponginess and taste. Do try making this healthy cake with whole wheat flour and brown sugar. This is a simple eggless cake recipe WITHOUT OVEN.

Ingredients:

Whole Wheat Flour - 1 1/4 cup or 160 gms
Powdered Brown Sugar- 3/4 cup or 120 gms
Baking Powder - 1 tsp
Baking Soda - 1/4 tsp
Oil - 1/2 cup or 125 ml
Milk - 3/4 cup or 180 ml mixed with 2 tsp Vinegar
Butterscotch Essence - 1 tsp
Yellow food colour - few drops

For Butterscotch Praline:
1/2 cup brown sugar + 1/4 cup crushed nuts

For Butterscotch Sauce/ Caramel Sauce:
1/2 Cup Brown Sugar, 20 gms butter
100 ml cream mixed with 50 ml milk

Method:
1. In milk add vinegar and keep aside for 5 min.
2. In a bowl, Sieve dry ingredients - whole wheat flour, baking powder, soda, powdered brown sugar.
3. Add oil, milk and combine everything well to prepare batter. Also add in butterscotch essence alongwith yellow food colour. Combine everything well and trasnfer the batter in baking dish.
4. Baking options:
- Preheat cooker with 1 cup salt for 15-20 min on medium to high flame. Bake in cooker for 25-30 min
- Oven at 180 degrees for 30-35 min
- Airfryer at 160 degrees for 20 min
5. Cool down the cake completely.
6. Praline - caramelize brown sugar and add in chopped nuts. Transfer the mixture on a butter paper and leave for 5 min. Crush it with help of rolling pin. Store in an airtight box. 
7. Butterscotch sauce or caramel sauce - Caramelize sugar. Once colour changes and sugar melts, turn off the flame. Add in butter and stir well till froth settles down. Add in mixture of cream and milk and turn on the flame. Add in little cream milk mixture at a time and stir continuously till creamy. Cool down the sauce for 2-3 hours or keep in refrigerator till the sauce thickens up. 
8. Spread caramel sauce on top of cake and decorate with crunchy praline. 
9. Cut the cake in any desired shape.

Ingredients:

For Dough
Whole Wheat Flour - 1 cup
Rava/ Semolina/ Sooji - 1 tbsp
Carom seeds / Ajwain - 1/2 tsp
Salt - 1/2 tsp, Oil - 2 tbsps
Water - 1/4 cup as needed for dough

For Stuffing:
Boiled Mashed Potatoes - 3 pcs
Green Peas - 1/2 cup
Salt, Red Chili powder, Turmeric Powder - As per taste
Chopped ginger Garlic- 1/2 tsp
Choped Green Chili - 1/4 tsp
Garam Masala, Coriander Powder, Dry Mango Powder - 1/2 tsp each

Rice Flour - 2 tbsp, Water 1/3 cup

Method:
1. Prepare Dough - In a mixing bowl, add all the ingredients of dough, mix and knead it well to make a hard and firm dough. Keep aside for 20 minutes for resting.
2. Stuffing - In a pan, heat oil and splutter cumin seeds, add in ginger garlic, green chili, add potatoes and all spices. Mix well. Add in green peas and cook for 5 min till soft and mussy. Cool down the stuffing completely.
3. Mix rice flour with water to prepare thin paste. Keep it aside. 
4. Take dough and knead it for one more minute. Make 2 equal sized portions out of the dough. Dust one portion of dough in flour and roll it in form a thin sheet using rolling pin. 
5. Place the stuffing and spread evenly. Now roll the atta sheet with the filling and cut it into half inch pieces.
6. Take each chopped samosa pinwheels and press the open side gently to make it like a round shape so that the inner filling looks like a pinwheel. Coat with prepared rice flour paste.
7. Place all the pinwheels in preheat airfryer. Bake at 180 degrees for 8-10 min. Then brush all pinwheels with oil for glaze and shine. Again air fry for another 2-3 min till crispy and golden brown.
8. Your Samosa Pinwheels are ready. Serve warm with tomato ketchup or green chutney.

Ingredients:
Cooked Rice - 2 cups
Thick Curd - 1.5 cups
Desi Ghee - 1 tsp
Salt - As per taste
Turmeric Powder - 1/2 tsp
Asfoetida (Hing) - a pinch
Cumin seeds (Zeera) - 2 tsps
Coriander Leaves for garnishing

Method:
1. In curd add salt, turmeric powder, hing and mix well.
2. Heat a griddle or pan. Heat desi ghee and splutter cumin seeds and hing in it. Place first layer of cooker rice and top with layer of curd. Likewise place 2 layers of alternating with rice and curd. Final layer should be of rice.
3. Cover it with a plate of big bowl and let it cook on low flame under "Dum" or steam for 2-3 min.
4. Flip the layers gently in such a way that top layer comes down . again cover with bowl and cook for 2 min in steam.
5. Serve hot

Ingredients:
Lotus Stem (Kamal Kakdi) - 250 gms
Gram Flour (Besan) - 3 tbsps
Kasturi Methi - 2 tbsp
Cumin seeds (Zeera) - 1/2 tsp
Carom Seeds (Ajwain) - 1/2 tsp
Salt, Red Chili powder - As per taste
Coriander Powder - 1 tsp
Amchur Powder - 1/2 tsp
Mustard Oil - 2 tbsp
Chopped Spring Onion for garnishing

Method:
1. Wash lotus stem pcs and cut into pcs. Stem it with 1 green cardamon, bay leaf till soft.
2. In cooked lotus stem pcs, add in all the ingredients and coat all the pieces very well.
3. Heat oil in a pan and saute coated kamal kakdi till crisp.
