Ingredients:
Potato - 2 medium sized
Rice Flour - 1/4 cup
Salt, Black pepper - As per taste
Baking Soda- a pinch
Ginger Garlic chopped - 1/4 tsp
Oregano, Chili flakes - 1 tsp
Butter - 2 tbsp
Toppings (Onion, carrots, bell pepper, corns, paneer)
Mozzarella Cheese - 1/2 cup grated

Method:
1. Grate potato and add rice flour, salt, black pepper, ginger garlic oregano and chili flakes. Mix well and keep it aside for 10 min.
2. Grease a pan with butter and spread the potato mixture evenly. Cover the pan with lid and let it cook for few minutes. Flip over and cook from another side.
3. Place all toppings and grate cheese. Give another layer of toppings and grate cheese again. Cover with lid and let it cook for 5 min on low flame.
4. Once the cheese melts, serve immediately.

Ingredients:
Cauliflower - 1 kg (small pcs)
Bay Leaf, Black and green Cardamom, cinnamon stick - 1 pcs each
Mustard oil - 3 tbsp
Cumin seeds - 1 tsp
chopped ginger Garlic - 1 tsp
Poppy Seeds - 2 tsp
Chopped Onion - 1 cup
Tomato Puree- 1 cup
Green Peas - 1 cup

Method:
1. Cut cauliflower stem and blanch in boiling water for 5 min along with cinnamon stick, cardamom and bay leaf. ensure cauliflower should not get over cooked. Sieve it and keep it aside.
2. In a kadhai, heat oil, splutter zeera, saute ginger garlic. Soak poppy seeds in half cup water for half hour and then grind with onion to prepare paste.
3. Add poppy seeds paste along with chopped onions, peas and cook for 5 min.
4. Add in tomato puree along with all masalas and cook till masala leaves oil. Add in blanched cauliflower and cook for 5-10 min.
5. Once ready serve immediately with rice or roti.

Garam Masala, Zeera, Chaat Masala - 1 tsp
Rice Flour/ Bread Crumbs - 2 tbsp
Mustard Oil - 1/2 cup
Method:
1. Soak dalia in 1 cup water for 30 min. Then drain extra water from dalia. Soaking will soften the dalia.
2. In a mixing bowl add all the ingredients to prepare mixture for cutlets. Add rice flour in batches till the mixture is able to bind nicely to prepaer cutlets.
3. Prepare cutlets in desired shape circle, heart or rectangle.
4. Cooking options - One can cook the cutlets on a greased tawa till crispy or airfry at 180 degrees for 8 min until crisp and gets a golden colour.
5. Serve immediately with sauce or dip of choice.

Whole Green Gram (Moong Dal) - 1/2 cup
Jaggery - 1/2 cup
Desi ghee - 2-3 tbsps
Cardamom Powder - 1/2 tsp
Cashew nuts - few pcs

Method:
1. Dry roast green gram on medium flame till the colour changes to reddish brown.
2. Cool it down completely at room temperature. 
3. In a blender jar, add roasted green gram, jaggery , cardamon powder along with cashewnuts. Grind it to a coarse powder.
4. In the mixture add desi ghee and prepare laddos. In case the mixture does not bind, add 1-2 tsp of milk in it.
