Fennel Seeds (Mote Sauf) - 25 gms
Sweet Fennel Seeds (Barik Sauf) - 25 gms
Sugar Coated Coloured Fennel Seeds - 25 gms
Coriander Splits (Dhania Dal) - 25 gms
Roasted Flax Seeds - 2 tsps
Fresh/ Dried dates - 5 pcs
Mishri - 50 gms

Method:
Mix everything well in a bowl and store in air tight container. One can store this mixture for around one month.

Ingredients:
Barley Flour (Jau ka Atta) - 1 cup
Whole Wheat Flour - 1/2 cup
Baking Powder - 1 tsp
Baking Soda - 1/2 tsp
Salt - 1/8 tsp
Cinnamon Powder - 1/2 tsp
Apple - 1 pcs + Lemon Juice - 1 tbsp
Powdered Brown Sugar - 1/2 cup
Oil - 1/3 cup
Milk - 1/3 cup
Vanilla Essence - 1 tsp
For Glazing - Apricot Preserve

Method:
1. Peel and chop apple into small pieces. Squeeze lemon juice on top of it and keep it aside.
2. In a bowl, combine all dry ingredients - barley flour whole wheat flour, salt, baking powder, baking soda, cinnamon powder.
3. Combine sugar, oil, milk and vanilla essence.
4. Mix dry ingredients with wet ingredients. Add in chopped apples and prepare batter.
5. If batter is too thick to work on, add little milk if desired.
6. Transfer the batter in a greased baking dish, level the top and bake in airfryer at 160 degrees for 18 min or in oven at 180 degrees for 30 min.
7. Once baked, while the cake is still hot, apple Apricot glaze. Microwave the apricot preserve or any jam flavour for 10 sec and apply it liberally on top. Keep it aside for cooling. This will give nice sheen and glaze to cake.
8. Once cooled, cut Barley cake into desired slices and serve.

Notes:
1. This cake can be prepared with only Barley flour without addition of wheat flour but it will be too fibrous, depending upon the amount of fiber in barley flour.
2. Addition of apple and cinnamon is optional. It gives lovely flavour to cake.
3. Apricot glaze is also optional step. Instead of apricot preserve, any jam or other flavour of preserve can be used.

Moong Dal - 1 cup
Brown Bread Slices
Chopped Onions, Carrots, Capsicum - 1/2 cup each
Salt, Red Chili Powder - As per taste
Turmeric Powder, Garam Masala, Coriander Powder - 1/2 tsp
Asfoetida - a pinch
Ghee/Oil/Butter - 1 tbsp
Sesame Seeds - 1 tbsp
Chili flakes - 1 tsp

Method:
1. Soak moong dal in enough water for half hour. Grind to form a coarse paste.
2. Add in all ingredients to make batter for toast.
3. Spread moong dal batter on bread slice and cook on tawa on low medium flame.
4. Cook till crisp from both sides.
5. Serve hot with chutney or ketchup.

Ingredients:
Poha (Flaked Rice) - 1 cup
Suji (Semolina) - 1 cup
Boiled Potatoes - 2 medium sized
Chopped Carrots, Beans, Onions - 1/2 cup each
Salt, Red Chili powder, Deggi Mirch - As per taste
Garam Masala, Coriander Powder, Chaat Masala - 1/2 tsp
Carom Seeds (Ajwain) - 1 tsp
Mustard Oil - For cooking

Ingredients:
1. Soak Poha in enough water for 10 min to soften it.
2. Heat 2 cups of water in a pan, add semolina and cook for 2-3 min till it turns into a solid mass and collects together. Do not over cook it. Switch off the flame and transfer it in a bowl to cool down.
3. In cooled and cooked semolina, add mashed potato, soaked poha along with all other vegetables and seasonings as per taste. Mix well
4. Make small cutlets and shallow fry or airfry at 180 degrees for 10 min until crispy from both the sides.
