Nimki namkeen, Namakpare, Mathri

Learn how to make Khasta Nimki recipe. Nimki is a very popular tea time snack flavored with ajwain and kalongi. Nimki tastes crispy and delicious and is simple to prepare. We are sharing healthy version of usual maida nimki by using whole wheat flour without frying. Atta nimki turns out to be equally khasta and crispy. Ingredients:
Whole Wheat flour - 1 cup + 1.5 tbsp
Salt - 1/2 tsp
Carom Seeds (Ajwain) - 1/4 tsp
Nigella Seeds (Kalonji) - 1/2 tsp
Oil - 1.5 tbsp
Desi ghee - 1.5 tbsp

Method:
1. Dough Making - Prepare a semi soft dough using all the ingredients except desi ghee. Keep the dough for resting for half an hour.
2. Sata - Mix 1.5 tbsp flour with 1.5 tbsp desi ghee. Mix well to make a paste.
3. After half hour, divide the dough into 2 portions and roll out one portion of the dough into thin sheet. Spread generous amount of sata over it.
4. Roll it tightly and cut into 1/2 inch pcs. Press each pcs and roll it again. Prick with fork to prevent puffing up.
5. Apply sat and fold into semicircle. Apply sata again and fold into triangle. Gently press the sides of nimki. And prick again.
6. Once can deep fry nimki or Airfry at 180 degrees for 12-14 min until crisp. Keep it in standby mode for 10 min and allow it to cool down completely.
